Bread. . .the Universal Comfort Food

Bread is a universal comfort food that transcends cultures and cuisines.

I'm crazy about all sorts of breads but I'm partial to artisan loaves and French bread. Yum. Any why not? Bread makes everything better.

From soft, fluffy rolls to crusty artisan loaves, to my delicious homemade sourdough, bread serves as the perfect base for meals.

You can dunk bread into a bowl of soup, eat it with salad, or have it as a snack. The warm, homemade aroma of baked bread evokes feelings of nostalgia, making it a staple at family gatherings and celebrations. (Can you imagine showing up at a family dinner without bread? I didn't think so!)

You get the point. I love bread. And I have a feeling you do too. Otherwise you probably wouldn't be perusing this list!

So, what types of breads will I cover in this post? Let's break it down:

Quick Breads

banana bread

Quick breads are a type of baked good that doesn’t require yeast. Instead, quick breads rely on baking soda, baking powder, or both as leavening agents. When you skip the yeast you can also skip the rising time. In other words, quick breads are, well, quick.

You'll find favorites like:

These breads don't require kneading, which makes them doubly quick. Quick breads can be sweet, like banana bread, pumpkin bread, and muffins, or savory, such as cornbread, soda bread, and herb bread. We've got quite a list, as you will see in the list below.

Yeasted Breads

"Proofed" breads require yeast as the leavening agent, as opposed to baking soda or powder. Yeast causes the sugars in the dough to produce carbon dioxide, which allows the bread to rise and develop its airy texture and rich flavor. This is called fermentation and it takes place during the "proofing" phase, which can take several hours.

(Patience, friend! It's worth the wait!)

Unlike quick breads, yeasted breads require kneading to build gluten and time for proofing, which makes the process longer. But trust me when I say it's so rewarding! Common types of proofed breads include white bread, whole wheat, brioche, and pizza dough.

In the list below you'll find some of my favorites, including:

Basic ingredients are flour, yeast, water or milk, salt, and optional sweeteners or fats. The process involves mixing, kneading, rising, shaping, proofing, and baking to create delicious, versatile breads.

The recipes below include classic homemade loaves, rolls, and other yeast-based breads that require proofing.

Sourdough Breads

Some would say that sourdough loaves are "yeasted" since they contain starter, but the process is incredibly different, which is why I've given my sourdough recipes their own section in this post. You'll everything from sweet to savory, loaves to focaccia.

The sourdough recipes you'll find in the list below use natural fermentation to create deep flavor and beautiful texture. And, if you're wondering how to create and/or maintain a great starter, I've got you covered on that, too.

Along with recipes, I've got all sorts of sourdough tutorials, including:

No matter where you are in your sourdough journey there's something in the list below for you. You'll find traditional sourdough, "cheater" sourdough, and lots of suggestions for add-ins, like jalapeño cheddar or even cinnamon!

Tips for Baking Bread at Home

sourdough stretch and folds

Baking bread at home can feel intimidating at first, (ask me how I know!) but it’s actually one of the most rewarding things you can make in your kitchen. Whether you're baking a quick banana bread or a classic yeast loaf, a few simple techniques can make the process easier and more successful.

Some of my top tips for bread-bakers:

  • Measure flour properly: It's critical to weigh your flour when making bread. Many bread flops happen because of improperly measured flour(s).
  • Learn the basics of proofing: Whether you're using yeast or starter, you'll need to discover the art of "proofing" your loaves.
  • Kneading vs. no-kneading: Some doughs require it; others do not. Discover great tips from Out of the Box Baking!
  • Quick Bread vs Yeast Bread: Which one is right for you?
  • Baking temperature tips: This is especially critical with sourdough, but knowing the right temp is so important in bread-baking!

Frequently Asked Questions About Bread Baking

sourdough dinner rolls

What is the difference between quick bread and yeast bread?
Quick breads use baking soda or baking powder for leavening, while yeast breads rely on fermentation to create rise and flavor.

What is the easiest bread for beginners to bake?
Quick breads like banana bread or muffins are usually the easiest because they don't require kneading or proofing.

Why does bread need to rise?
The rising process allows yeast to ferment sugars in the dough, producing carbon dioxide that creates a light, airy texture.

Can I bake bread without yeast?
Yes! Quick breads such as banana bread, soda bread, and cornbread use baking powder or baking soda instead.

What type of flour is best for bread?
Bread flour works best for many yeast breads because it contains more protein, which helps develop gluten and structure.
