Delicious Banana Berry Bread. . .from Scratch!

I actually started with a cookie recipe for this cake, to be honest: my banana chocolate chip cookies, specifically. Of course, I made a few tweaks, knowing this would bake in a 9×13-inch pan.

  • I skipped the pecans. 
  • I swapped out the chocolate chips for blueberries. 
  • I threw in a cup of oats. 
  • I added half a cup of coconut. 
  • I cut back a little on the flour, since I decided to add the oats. 
  • Oh, and I tossed in a couple of eggs. 

Okay, okay. . .so this really wasn’t much like my cookie recipe after all. And even as I type this, I can’t help but laugh. Sometimes I just go off on a tangent and do my own thing. 

But sometimes “my own thing” turns out great! I was really hoping this one would work out. . .and it did! In fact, I can’t wait to share this new banana berry bread recipe with you guys. 

Blueberries. . .and Bananas?

You might recall I have another recipe that is out of this world. My Banana Blueberry Loaf is a personal favorite. 

So, I knew that the blueberries would pair beautifully with the banana flavor. Many of my recipes have oats in them. (Take my No Bake Chocolate Oat Bars, for instance.) So, adding oats made sense. 

The only thing that gave me pause was the coconut, but in the moment it just felt right. . .so I threw it in. (I put coconut in my Banana Bread Maui a few months back, so I figured it should be pretty tasty.)

I’ll tell you more about the outcome in a bit but let’s pause for a moment to talk about what you’ll need to make these soft cake-like bars.

You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need to make this lovely banana bread recipe. These are simple ingredients you might already have on hand. If you don’t have blueberries swap them out with any other berries you have on hand. 

  • room temperature butter. 
  • ripe bananas
  • light brown sugar, packed
  • granulated sugar
  • vanilla extract
  • all purpose flour
  • baking soda
  • quick oats
  • fresh blueberries
  • sweetened coconut

How to Make Banana Blueberry Oat Bread

This bread came together so easily, y’all! I’m so happy to have another simple recipe to help use up all of these bananas I keep buying. 

Preheat your oven to 350 degrees Fahrenheit. 

Grease a 9×13-inch pan (or use cooking spray). Place a piece of parchment paper in it and spray it with more nonstick spray. Set aside. (Alternatively, you can bake this in a loaf or a bundt pan.)

Place room temperature butter in a large mixing bowl or the bowl of a stand mixer with paddle attachment. Mix until light and creamy. 

Add both sugars and vanilla.

Mix for 1 – 2 minutes until it’s light and fluffy.

Now it’s time to add the eggs and overripe bananas.

Mix until incorporated.

It’s time to add some dry ingredients. Toss in the flour and baking soda. Mix until it all comes together.

Add in the oats and coconut.

Only mix until incorporated. You don’t want to over-mix now that the flour is in.

It’s wild blueberry time! (Check out those juicy blueberries, y’all!)

Gently fold in the blueberries with a rubber spatula. (Doesn’t the combination of coconut, oats, and berries make you want to eat the batter?)

Transfer batter to prepared baking dish.

Smooth it down.

Place in preheated 350-degree oven and bake for 30 – 35 minutes or until bread is golden brown and springs back to the touch. (If you bake in a bundt it might need to cook a little longer.)

Remove and place on a wire rack to cool. 

Once cool, you can sprinkle with powdered sugar.

Cut bread into squares and serve.

Cover leftovers in plastic wrap and store in the refrigerator up to three days. This recipe can be frozen in an airtight container (or in freezer bags) up to two months. 

What to Expect from this Blueberry Banana Oat Bread Recipe

I knew I would love this because I’m so crazy about my banana blueberry loaf. But y’all. . .this luscious berry-infused bread is out of this world good! And the flavor of the mashed bananas is perfect in combination with the rest of the ingredients.

They have the similar flavors and textures as my Banana Blueberry loaf, but the addition of the coconut took it over the top. (It’s crazy, how a few additions can give something such a nice texture.)

I love texture so I’m a huge fan of the oats, as well. Baked in a 9×13-inch pan, this recipe has a cake-like feel to it, so much so that I almost labeled this a Banana Blueberry Oat Cake.

But I can’t get around the fact that this is, of course, another spin on the old favorite–banana bread.

  • With blueberries.
  • And oats.
  • And coconut.

I’m delighted to report that my experiment worked! It really, really worked! 

Now, I won’t say this healthy blueberry banana bread, though one could argue that blueberries have antioxidants and oats are loaded with fiber.

If it makes you feel better to call it healthy, well. . .who am I to argue?

There’s nothing finer than a slice of banana bread in the morning, so make sure you save some for breakfast.

Variations on this Banana Berry Bread Recipe

This recipe is delicious but you guys know me: I’m always looking to change things up. Here are a few ideas that come to mind:

Raspberries: I’m thinking raspberries would be delicious in place of the blueberries. They would add a tartness that would merge well with the bananas. 

Toasted coconut on top. Why didn’t I think of this? Sprinkle the top with coconut for the final few minutes of the bake to end up with a toasty top! 

Streusel: If you’ve followed me for any length of time you know I adore streusel. This banana bread would be delicious with a streusel topping on top of the batter. Yum! 

Glaze: I think a cream cheese glaze would be yummy on this bread, as well. 

Bundt Pan: As I mentioned above, I think this recipe would convert to a bundt pan with no problem. If I baked it up that way it would look more like a traditional banana bread.

Coconut Sugar: If you’re looking for an alternative to granulated sugar, you might choose coconut sugar, which would make a lovely addition to this recipe.

Mini loaf pans: Bake it up in mini loaf pans with streusel on top!

Banana Blueberry Muffins: Bake these up in muffin tins. They would be delicious that way.

Wheat flour or almond flour: If you don’t want to use white flour you can use wheat. It will firm up the dough a bit. I’m not as familiar with almond flour but since this recipe also has oats, I would imagine that adding almond flour would make this dish more dense, like a banana berry bar. (That sounds good, though!)

No matter how you bake it up, this is one of those delicious banana bread recipes you’re going to make again and again.

Ingredients

  • 1/2 cup room temperature butter.
  • 3 small (ripe) bananas
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon real vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 cup quick oats
  • 1 cup blueberries (fresh)
  • 1/2 cup sweetened coconut

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Grease a 9x13-inch pan. Place a piece of parchment paper in it and spray it with nonstick spray (or grease it). Set aside.

  10. Place in preheated 350-degree oven and bake for 30 - 35 minutes or until bread is golden brown and springs back to the touch.
  11. Remove and place on a wire rack to cool.
  12. Once cool, you can sprinkle with powdered sugar.
  13. Cut into squares and serve.
  14. Store in the refrigerator up to three days. This recipe can be frozen in an airtight container (or in freezer bags) up to two months.
