Banana Dump Cake? Is that a Thing?
I’ll be honest with you, my friends. I feel like I spend half of my life trying to figure out what to do with overripe bananas. I buy them every week and rarely eat them all.
Tonight I knew that I needed to use my latest bunch of bananas in a baking project before they reached the unusable point.
Oh, I’ve baked a lot of banana recipes in the past. You name it, I’ve baked it: Cakes ( ), cookies ( ), and muffins.
Tonight, though? I had this random idea that I’d like to make a dump cake using bananas.
What is a dump cake?
A dump cake is cobbler-like in taste and texture. Usually you start with a can or pie filling (or canned fruit, like peaches) and dump them into a 9 x 13-inch pan.
Then, to form the cobbler top, you take a yellow cake mix or white cake mix and dump it on top (dry mix only). After that, you top the whole thing off with slices of butter and bake until it’s golden and luscious.
Because I wasn’t starting with a can of pie filling or fruit this time I knew I would need some additional liquid.
I toyed with the idea of using sweetened condensed milk but ultimately decided that would make the dump cake too sweet and sticky.
I settled on evaporated milk. I used a fully cup of it. I also decided to throw in some cinnamon-sugar and pecans. I wanted this dump cake to taste like my Banana Bread recipe.

Banana Dump Cake Ingredients
- overripe bananas (sliced)
- evaporated milk
- cinnamon-sugar mixture
- chopped pecans
- white cake mix (any brand)
- cold butter, sliced
How to Make Easy Banana Dump Cake with Pecans
This was so easy-breezy to make, y’all! You can whip it up in no time at all.
Start by preheating your oven to 350 degrees Fahrenheit.
Butter a 9 x 13-inch pan (or use a bit of cooking spray). I used my favorite new Pioneer Woman baking dish. I like it because it has handles to grip, something that really comes in handy.
Slice the ripe bananas and spread them across the bottom of the buttered dish.
Sprinkle a cup of chopped pecans over the sliced bananas.
Sprinkle with 3 tablespoons cinnamon-sugar mixture over the pecan and banana layer.
Pour a cup of evaporated milk over the ingredients.
Sprinkle the full box of white cake mix over the other ingredients.
Sprinkle with the remaining tablespoon of cinnamon-sugar mixture over the top of the cake mix.
Add cold (not room temperature) butter slices.
Place in preheated 350 degree oven and bake for 30-35 minutes or until golden brown.
Remove from the oven and place on a wire rack to cool.
Scoop into individual bowls with a large spoon.
If you like, you can serve with ice cream or whipped cream. I drizzled mine with caramel sauce for even more flavor. (Yum!)
Store leftovers in refrigerator for up to three days. I do not recommend freezing this dessert.
What to Expect from this Banana Pudding Dump Cake Recipe
This one’s going to be an instant crowd pleaser. Everyone loves a traditional dump cake! (Talk about an easy and great dessert.)
I can’t believe I’ve never thought of this before today! I’ve always loved dump cake and I’ve always loved banana bread.
This was the perfect blend of the two.
The warm banana mixture at the bottom, the crunchy cinnamon-sugar pecans in the middle, and the rich cake on top? Well, let’s just say it was the absolute perfect blend.
I can’t wait to make this one for my family. They’re going to love it! This is an easy dessert I plan to make again and again! It’s guaranteed to satisfy your sweet tooth.
Variations on this Easy Dessert Recipes
This is one of those easy dump cake recipes you can whip up in a hurry. I loved this recipe just as I made it, but you guys know I can’t leave good enough alone. I’m already thinking of ways to mix things up next time.
Here are some things I’m hoping to try:
Coconut: Bananas and coconut just go together! Next time I’ll swap out a cup of cream of coconut (or coconut milk) for the evaporated milk. I’ll add a cup of coconut on top of the bananas and another half cup on top of the butter slices (to toast as the cake bakes).
Peanut Butter: In place of caramel, melt some peanut butter and drizzle it over the top of your dessert.
Berries: I love banana berry. If I add berries (blueberries or blackberries) I’ll probably put them in place of the pecans. I’ll leave out the cinnamon-sugar mixture if I add berries.
Chocolate chips: Yum. I think chocolate chips would be wonderful along with the pecans. I would probably skip the cinnamon-sugar if I add chocolate.
Chocolate Cake Mix: Why not? Use chocolate cake instead of white. Just skip the cinnamon-sugar mixture.
Vanilla Pudding: You can make up a box of vanilla pudding and use it in place of the evaporated milk. Then you’ll truly have a Banana Pudding Dump Cake.
Favorite Banana Split Toppings: Add strawberry puree, chocolate syrup, or crushed pineapple to top off this luscious dessert. You’ll feel like you’re having a banana split. Don’t forget to add a big scoop of vanilla ice cream! Talk about an ice cream sundae-inspired dessert!
Strawberry Cake Mix: Skip the cinnamon sugar mixture and swap out the white cake with a box of strawberry cake mix. (You can add chocolate syrup and pineapple on top.)

This was fantastic! Had several over ripe bananas and wanted something easy and different. Tossed this together (used gluten free cake mix) cooked it while we had lunch. The whole family minus one granddaughter was around the table. Took it out of the oven expecting everyone to want to wait! Left the kitchen for a few minutes came back to an almost empty dish! Quickly grabbed a bowl and discovered why! It was soooo good. Definitely a do over.
