Banana Berry? Is that a Good Combination?
It is, my friends. It is. I’ve made other banana berry desserts in the past. For instance, my Easy Banana Berry Cake was a real hit with my writing group.
Oh, and my Strawberry Banana Bread with Coconut was terrific, too.
So, I figured blueberries and bananas would pair well together, though I’ve never used that combination before.
I had leftover berries from my Traditional blueberry muffins and lots of speckled bananas. Putting the two together just made sense.
I’ll tell you more about my take on this loaf in a bit, but looks look at what you’ll need to make it.
Banana Blueberry Loaf Ingredients
LOAF INGREDIENTS
You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need. These are simple ingredients you likely have in your pantry or refrigerator.
- salted butter
- all-purpose flour
- large eggs
- brown sugar
- granulated sugar
- vanilla
- fresh blueberries
- overripe bananas
- baking powder
- baking soda
- salt (if you use unsalted butter)
TOPPING INGREDIENTS
- all purpose flour
- melted butter
- brown sugar
How to Make this Easy Banana Blueberry Loaf
This recipe came together so easily! I’ll be making it again, that’s for sure! Here’s how I made it:
Make topping:
Combine all three ingredients in a small bowl and set aside.
Make the loaf:
Prep a loaf pan with non-stick spray, then dust with flour. Set aside.
Combine flour, baking powder, baking soda, and salt in medium bowl. Whisk together and set aside.
In a small bowl, mash bananas and set aside.
In a large bowl (or the bowl of a stand mixer) cream butter.
Add sugars, eggs, and vanilla. Mix well.
Add mashed bananas, mixing lightly.
It’s time to add the dry ingredients (flour mixture) to the banana mixture. Don’t over mix.
Fold in blueberries. (If you lightly flour the berries they won’t sink to the bottom.)
Pour batter into a prepared loaf pan. (If you like, you can add a piece of parchment paper to the bottom and two sides for easier lifting after the banana loaf bakes.)
Sprinkle crumble topping onto the top of the batter.
Place in preheated 350 degree oven.
Bake for one hour and fifteen minutes (75 minutes) or until golden brown and set in the middle. This is a lot of batter, so your pan will be fuller than usual, which is why you might need to bake it a little longer.
If your topping is getting too brown you can place a tented piece of aluminum foil over the pan for the final few minutes of the bake.
Remove from oven and place on wire rack to cool.
After ten minutes, remove bread from pan. Continue to cool directly on the wire rack.
Slice and serve!
I like mine with fresh butter. Yum!
Store banana bread in an airtight container or wrap tightly in plastic wrap.
Store in refrigerator up to a week.
Bread can be frozen up to two months.
What to Expect from this Banana Blueberry Loaf
First of all. . .wow! I absolutely love the combination of blueberries and bananas. (Who knew?)
This is a rich, moist bread with a wonderful topping. It’s a classic banana bread recipe. . .with a juicy blueberry twist!
I especially love the flavorful pop of the juicy blueberries. They’re perfectly paired with the other ingredients. (Yum!)
This bread just cries out for a cup of coffee or hot tea. It’s a coffee cake in loaf form and perfect for breakfast, afternoon snack, after after-dinner dessert.
Overall, I’d say this one was a real hit. I’m so glad I thought to add the crunchy topping. It’s just the ticket!
Variations on this Recipe
Banana Blueberry Muffin: I feel sure this recipe would work beautifully for muffins.
Frozen blueberries: You can use frozen berries but be aware of one thing: They sometimes “lock up” your batter, making it hard to stir.
Mini loaf pan: You could easily bake this recipe in mini loaf pans. These would be so fun to bake for friends or neighbors.
Sour cream or greek yogurt: If you like, you can substitute one of the bananas with a quarter cup of sour cream. This will add tartness and texture to the cake.
Crumb topping with pecans or oats: For added texture, stir in half a cup of oats or pecans to the streusel before placing it on the loaf.
Fresh berries and whipped cream: To serve this as a dessert, add a few fresh berries and a dollop of whipped cream.
