  • canned pumpkin puree (not pumpkin pie filling)
  • brown sugar
  • large eggs
  • pure vanilla extract
  • vegetable oil or melted butter
  • all-purpose flour
  • pumpkin pie spice
  • ground cinnamon
  • baking soda
  • baking powder
  • pinch salt
  • walnuts or pecans

How to Make this Delicious Pumpkin Banana Bread

This comes together so easily, y’all! I whipped it up in a hurry.

Preheat oven to 350 degrees.

Prepare a loaf pan with Baker’s Joy or other non-stick baking spray.

Place flour, spices, salt, baking powder, and baking soda in a medium bowl and whisk together. Set aside.

In a large bowl (or the bowl of a stand mixer) mash your bananas.

Add pumpkin puree and brown sugar.

Mix well.

Now work in the eggs and vanilla extract.

Add the oil and mix well.

Add flour mixture but don’t over-mix.

Butterscotch chips: I don’t know why, but it occurred to me that butterscotch chips would make a nice addition. Just a cup or so should do.

Maple glaze: I had every intention of adding a maple glaze to the top of this loaf before slicing. I had planned to use the recipe that I used with my Pumpkin Spice Shortbread cookies.
