Explore the ultimate guide to brownies and dessert bars! Discover fudgy brownies, cookie bars, cake mix bars, fruity bars, and layered desserts perfect for parties, bake sales, and everyday baking.

Few desserts are as easy, portable, and crowd-pleasing as brownies and dessert bars.
Whether you're baking for a church gathering, school party, bake sale, or family get-together, bar desserts are one of the simplest ways to feed a crowd. Everything bakes in a single pan, the portions are easy to cut, and the results are consistently delicious.
And here's the cool part: You can dress them up. . .or down. Make 'em fancy, or leave them plain. They're delicious, either way. (Hey, have you ever heard anyone complain about a brownie or cookie bar? I didn't think so!)

Over the years I’ve created dozens of brownie and dessert bar recipes here at Out of the Box Baking, ranging from rich chocolate brownies to gooey cake mix bars, fruity crumb bars, and cookie-style dessert bars.
Many of these recipes start with a shortcut ingredient like a boxed cake mix, while others are made completely from scratch. Either way, the goal is the same: big flavor with minimal fuss.
Baking. It's Messy Work.
I can't answer for you, but I'm not a fan of a messy kitchen. And I can promise you this: a dessert that doesn't wreck the kitchen? Well, that's a dessert that's calling my name!
If you love desserts that bake in one pan and slice beautifully into squares for sharing, this collection is for you.
So, what are we waiting for? Let's take a look at several of the brownie and bar recipes you'll find on this site.
Classic Brownies
Brownies are the foundation of the bar-dessert world. Rich, chocolatey, and endlessly adaptable, they’re a favorite for good reason.

Some brownies are dense and fudgy, while others bake up light and cake-like. You’ll find both styles here, along with brownies that include delicious add-ins like chocolate chips, nuts, and frosting.
Look for recipes such as:
- Easy Brownies from Scratch
- Hot Cocoa Brownies
- Cake Mix Brownies
- Simple Doctored Brownie Mix
- Mint Chocolate Brownies
- Grasshopper Brownies from Scratch
- Peppermint Bar Brownies
- Sourdough Brownies

If you’re a chocolate lover, this section alone will keep you busy baking for quite a while.
Cake Mix Bars (Quick & Easy Favorites)
If you’ve spent any time on this site, you know I love a good shortcut—and cake mix bars are one of the easiest desserts you can make.

With just a few ingredients and one mixing bowl, a simple boxed mix can transform into soft cookie bars, gooey layered desserts, or rich chocolate treats.
These recipes are perfect for:
• Busy weeknights
• Last-minute gatherings
• Bake sales and potlucks
• Beginning bakers
Some of the most popular bars on this site start with a cake mix and end up tasting completely homemade.
You’ll find favorites like:
- Red Velvet Bars
- Cappuccino Bars
- Easy Carrot Cake Bars
- Chocolate Chip Brookies
- Chocolate Peanut Butter Chewies
If you enjoy baking shortcuts that still deliver amazing flavor, this section is full of inspiration.
Cookie Bars
Sometimes cookies are easier when baked in a pan. Cookie bars give you the same great flavors as traditional cookies without all the scooping and multiple batches. Everything goes into one pan, bakes together, and slices into thick, bakery-style bars.

These are especially popular for bake sales and parties because they travel well and hold their shape beautifully.
Look for delicious options like:
- Snickerdoodle Cookie Bars
- Peppermint Bark Cookie Bars
- Monster Cookie Bars
- Iced Oatmeal Cookie Bars
- Chocolate Chip Brookies
- Heath Cookie Bars
- Pecan Pie Bars
- Valentine Cookie Bars
If you love classic cookie flavors, cookie bars are a wonderful way to enjoy them.
Fruity Dessert Bars
Fruit-filled bars bring bright flavor and beautiful color to any dessert table. These recipes often combine buttery crusts with sweet fruit fillings and crumbly toppings, creating a perfect balance of flavors and textures.

Fruity bars are especially popular in spring and summer when fresh berries and citrus flavors shine.
Some favorites include:
- Luscious Lemon bars
- Luscious Lemon Blueberry Bars

These recipes are perfect when you want something sweet that feels a little lighter than rich chocolate desserts.
Gooey & Layered Bars
Some dessert bars are all about indulgence. These recipes combine layers of chocolate, caramel, coconut, graham crackers, or creamy fillings to create rich desserts that are impossible to resist.

They’re perfect for holidays, special occasions, or anytime you want a dessert that feels extra special.
Popular layered bar desserts include:
- Magic cookie bars

Holiday Dessert Bars

Bars and Brownies are incredibly popular during the holidays because they’re easy to bake in large batches and simple to share with friends and neighbors.
Seasonal bars might feature festive spices, colorful decorations, or flavors that remind us of special celebrations throughout the year.
Here are a few of my favorites:
- Peppermint Brownies (perfect for Christmas)
- Pumpkin Spice Bars (great for the fall)
- Be my Valentine Brownies
Holiday bars are a wonderful addition to any dessert spread.
Tips for Perfect Dessert Bars
Bar desserts are simple to make, (one more reason why I love 'em!) but a few helpful tricks can make them even better. And, hey. . .better is always, well. . .better.
Line your pan with parchment paper.
This makes it much easier to lift the entire dessert out of the pan before slicing.
Allow bars to cool completely.
Warm bars often fall apart when cut. Letting them cool ensures clean slices.
Use a plastic knife for clean cuts.
Plastic knives work surprisingly well for slicing brownies and bars without sticking.
Chill gooey bars before cutting.
For layered or sticky bars, a short chill in the refrigerator can make slicing much easier.
