I live in Texas, not far from the Gulf Coast. I also happen to work at an inner city ministry, and Spanish foods are all the rage.
We happen to have an affinity for Mexican food and treats in my neck of the woods and there's no better time of year than Cinco de Mayo to celebrate some personal favorites!
Best of all, it doesn't matter where you live. You can enjoy some sweet treats in your part of the world, too! (And you don't even have to wait till May to bake them!)
What is Cinco de Mayo?

The Cinco de Mayo holiday commemorates the Mexican army’s unexpected victory over French forces at the Battle of Puebla on May 5, 1862. While it’s a relatively minor holiday in Mexico, it has grown into a joyful celebration of Mexican culture, food, music, and heritage in the United States. Ironic, right?
By the way, I happen to be in Mexico at this very moment, on a missions trip. We're in Central Mexico and I've spent the last four days eating more than my fill of Mexican foods. (Another fun note: it's November, not May, as I write this post.)
