These are strange times we're living in, where eggs are so pricey! If you're looking for recipes that call for fewer eggs, I've got a bunch for you in this post!

Why do most recipes call for eggs?
Eggs are used to bind, to add structure, protein, and flavor to baked goods. But these days, eggs are expensive! And there's no indication that prices will go down anytime soon.
You can use egg substitutes if you like. I wrote a complete post on those! But if you're like me, you enjoy the flavor that eggs add to baked goods.
With that in mind, I decided to share all of my 1-egg recipes. This way you really can have your cake and eat it, too. (Pun intended.) You can bake with an egg. . .singular.
Here are a few of my favorite 1-egg recipes:
