Quick and Easy Hash Brown Casserole
I don’t know about you but I love whipping up breakfast casseroles. I’ve got a really yummy Breakfast Sausage Casserole and I’m crazy about my Bisquick Breakfast Casserole. I’ve got a couple of other breakfast dishes that are delicious, too: my Breakfast Enchiladas and Crustless Quiche.
This time around, I decided to go meatless. This casserole is heavy on the potatoes and loaded with cheese. It’s also got a can of cream of chicken soup in it.
Now, I know what you’re probably thinking: chicken soup. . .for breakfast? I promise, you won’t notice any chicken flavor once it’s all mixed in together. You’ll just love the creamy, delicious, cheesy casserole. It’s sheer perfection.
Hash Brown Casserole Ingredients

You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need. These are simple ingredients you might already have on hand.
- 32 oz frozen hashbrowns
- 2 cups grated mild cheddar cheese
- 1 cup sour cream
- 1 cup heavy whipping cream
- 1 can cream of chicken soup
- ½ cup semi-melted butter
- 1 small onion, diced
- 1 teaspoon salt
- Pepper to taste
How to Make Simple Hash Brown Casserole
Preheat oven to 375 degrees Fahrenheit.
Dice onion and set aside.

In a mixing bowl combine sour cream, whipping cream, chicken soup, and melted butter. Mix well.

Add 1 ½ cups of the grated cheese, as well as the chopped onions.

Mix well.

Stir in the hash browns until well combined.


Add salt and pepper. Mix well.
Pour into prepared 9x13-inch casserole dish and top with the rest of the cheese.

Place in preheated 375 degree oven.
Bake for 45 - 55 minutes until and bubbly.

Remove and place on wire rack to cool.
Serve warm.

Store leftovers in airtight container in the refrigerator up to three days. You can freeze this casserole to eat later if you like.
