Simple Crustless Quiche

If you’re in the mood for a simple breakfast dish that won’t break the calorie or carb bank, this is the recipe for you! In this post I’m going to show you how to make a delicious and simple crustless quiche.

 

What is Quiche? 

Maybe you’re wondering what this word “quiche” means. Well, let’s do a little research: 

Quiche is a savory baked dish that got its start in France. Ordinarily it’s made with a pastry crust filled with a mixture of eggs, cream, and various ingredients like cheese, vegetables, meat, seafood, or herbs. The fillings can be very diverse, incorporating any number of textures and flavors. 

Talk about a low-carb breakfast option! Without the crust, this meal is completely guilt-free!

Quick is Delicious and Easy!

One of the cool things about a classic quiche is that you can serve it any time of day, depending on what you add to it. It’s high in protein, which means you’re getting a well-rounded me, whether you serve it for breakfast, brunch, lunch, or a light dinner. 

One more fun fact: Quiche can be served hot or cold and is popular in many countries around the world, with various regional variations and adaptations. 

Me? I happened to be in the mood for bacon and cheese. I’m pretty plain Jane and this just felt right to me. And even though this was my first time to make a crustless quiche, it certainly won’t be my last.

Crustless Quiche Ingredients

You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need. These are simple ingredients you might already have on hand. 

  • eggs
  • milk
  • Bacon bits (or other meat)
  • grated cheese (any flavor) 
  • chopped green onions 
  • Salt and pepper to taste

How to Make this Easy Quiche Recipe

I was startled at how easily this simple homemade quiche came together! 

Preheat oven to 350 degrees Fahrenheit. 

Place eggs and milk in a large bowl and grab a whisk. Add salt and pepper. Whisk egg mixture together.

Add your other ingredients. I added green onions. 

Then I added bacon bits. (I saved time by using a package of bacon bits.)

Finally, I added four slices of velveeta cheese, grated. I went with this cheese because it’s lower in calories and I’m trying to behave right now. You can add any cheese you like. (See variations below for examples.)

Spray a pie plate with nonstick spray. I happened to have a butter flavored one so I used that. Fill with mixture.

Alternatively, you can use an oven-safe skillet, if you prefer.

Place pie dish in preheated oven and bake for 35 – 45 minutes or until set and golden brown on top. (Mine baked for the full 45 minutes.)

Remove and cool.

Slice and serve. 

How to Store this Quiche

You can store remaining quiche in an airtight container (or tightly covered in plastic wrap) in the refrigerator. Because there’s no crust, it can be rewarmed in the microwave. 

This quiche is also easy to freeze, which makes it great for meal prep. Freeze leftover quiche in individual slices and allow to come to room temperature naturally, then warm in the microwave.

I sliced my quiche into pie slices and froze them individually for an easy breakfast. 

What to Expect from this No Crust Quiche Recipe

This is a delightful and easy quiche, the perfect low carb dish. It’s perfect for special occasions or simply for your next breakfast.

I liked the fact that the bottom of the quiche crisped up. This gave me a similar feel to a crust without the added calories. 

However, if you’re the kind of person who must have a crust, you can pour this mixture over a pre-baked pie crust and then bake it to perfection. (My Pie Crust recipe could easily be use for a quiche crust.)

I’m crazy about bacon and cheese, so those were good choices, too. 

Variations on this Savory Quiche

There are so many different ways to change up this healthy crustless quiche recipe. Here are a few suggestions for add-ins for this easy meal: 

Pepperoni and parmesan. I plan to make this version soon, along with a couple tablespoons chopped tomato and Italian seasoning. (This would be a perfect dinner recipe!)

Hamburger and onion: This sounds delicious, doesn’t it? Throw in some grated cheddar for a cheeseburger quiche. 

Spinach quiche with feta cheese. I mean. . .yum. Delicious! Use fresh spinach

Cheese and herb: Add your favorite cheese (or two of any favorite) and add all of the herbs you enjoy: dill, basil, parsley. . .whatever you enjoy. Here are a few cheese to try: Swiss cheese, cheddar cheese, gruyere cheese, parmesan cheese, or whatever you like.

Southwest Quiche: Add taco meat (seasoned), cheese, jalapeño, and a couple tablespoons diced tomato. 

Olive oil: You can add a little bit to the bottom of the dish, if you like.

Bake this recipe in muffin tins, then freeze them for an easy grab-and-go breakfast. (Fun!) 

Add self-rising flour: If you want the illusion of a crust, add 1/3 cup self-rising flour to the egg mixture before baking. It will help the quiche come together. 

Muffin Tin Quiche: You can put this recipe into greased muffin cups and bake until set. They can be individually frozen for a quick breakfast on the go.

No matter how you mix them up, egg dishes are perfect when you’re counting calories and carbs.

Other Savory Bakes from Out of the Box Baking

Savory Scones (Bacon, Cheddar, Chive): Scones originated in Scotland in the 1500s and became the height of fashion in the 1800s in England. A friend of Queen Victoria’s, (Anna, Duchess of Bedford), popularized the treats. She enjoyed afternoon “light food” which included tea (of course) and scones or biscuits.

Cheddar Bay Biscuits: You love those buttery, hot, cheesy biscuits at Red Lobster and you’re wishing you could make some at home. But most of the Cheddar Bay Biscuit recipes call for Bisquick mix, and you don’t happen to have any on hand. No problem! In this quick tutorial we’re going to whip up a batch using an ingredient you probably do have in your refrigerator. . .mayonnaise!

Foolproof Hash Brown Frittata (Gluten Free): If you’re looking for a simple, foolproof frittata recipe, one that doesn’t require a ton of work, this is the one for you! Just a few basic ingredients and you’ll bake up a delicious breakfast no one will forget.

My frittata recipe has hash browns on bottom. The quiche does not. But I suppose it would be similar. (Can you tell I'm on a diet? I'm exploring recipes that are lower in calories and carbs.)
