A Delicious and Simple Breakfast
A couple of days back I decided to start watching my calories again. I’ll admit, I’ve been up and down like a yo-yo with my weight, but more up than down since I started this blog.
So, I did some “serious” grocery shopping. I bought a bunch of things that I thought might help me stick to a healthier eating plan.
Healthy Breakfast Dishes
I purchased turkey sausage and a bag of frozen hash browns. I had a feeling I could use them together, and this recipe (which I concocted on my own) turned out to be perfect.
I wanted something so simple that I could make it in advance and store it in the fridge or even in the freezer. So, I started looking at frittata recipes.
They all looked great, but most didn’t have meat in them. They were mostly hash brown and egg mixtures. I wanted something heartier.
I knew right away I couldn’t follow any of the online recipes because I didn’t have a skillet with an ovenproof handle (or even one with a removable handle). All of those recipes called for that.
Changing up a Frittata Recipe
So, I decided to start mine in a skillet (like they did) but then transfer it to the oven for the bake.
And guess what?! It worked, y’all. I made an easy, foolproof frittata, once that could be sliced and stored in the fridge or freezer.
A side note about the gluten free part: Make sure you choose a potatoes-only brand of hash browns to ensure the dish is gluten free. Also check the meat to make sure it doesn’t have any gluten fillers.
This is such an easy recipe. I plan to make it again!
Frittata Ingredients
You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need. These are simple, common ingredients you might already have on hand. (Remember, you can really use any meat you prefer—from bacon to ground beef.)
- frozen hash browns (I used the Simply Potatoes brand)
- turkey sausage (or regular breakfast sausage)
- yellow onion
- olive oil
- large eggs
- whole milk (or heavy cream)
How to Make this Easy Hash Brown Frittata
This one comes together so easily and it’s extremely versatile! You can make it with or without cheese and can change up the meat if you’re not a sausage fan.
Start by preheating oven to 375 degrees.
Chop onion and set aside.
Whisk eggs and milk in a large bowl. Add salt and pepper. Set aside.
Place sausage in a large skillet and break it up into small pieces. Cook over medium high heat.
When sausage is about halfway cooked, add the chopped onion.
Remove from skillet with a slotted spoon but leave the oil. (If there’s no oil, add a tablespoon of olive oil).
Add full package of hash browns. Add salt and pepper and any other seasonings you might like.
Cook them over medium heat until they are about 2/3 done. (Mine weren’t quite done enough.) You’ll want lightly golden brown potatoes.
Lightly grease a 9 x 13-inch casserole dish. (Alternatively, if you have an oven-safe skillet, you can use that. It will make for a crisper crust. A cast iron skillet would be perfect, especially if you start with a hot skillet. You’ll end up with crispy potatoes.)
Press cooked shredded potatoes into the bottom, forming a crust. You’ll want an even layer.
Pour egg mixture over potatoes.
Add meat and onions.
Place in preheated oven and bake for 40 minutes or until fully baked and golden brown.
Remove and allow to cool.
Cut into squares and serve.
Store leftovers in an airtight container or wrapped in plastic wrap. I put mine in ziplock bags to freeze for later use. (It’s fun to have grab-and-go breakfasts!)

I’m so happy with the outcome of this one, y’all! I just love savory bakes, especially the ones I can serve as a meal. This was a delicious egg dish, loaded with protein, which was just what I needed!
I loved the lovely potato layer on bottom of the slices. Next time I’ll probably fry my hash browns a little more before adding them to the casserole dish so they’re more crisp.
That egg mixture set up perfectly, forming the perfect tasty glue for this dish, which was perfect! (Talk about easy to slice!)
The star of the show (in my opinion)? The sausage and onion. I thought they were the perfect complement.
This is one of those fabulous recipes I plan to make again and again! In fact, I’m already looking at other ways to bake this tasty breakfast dish. (Or, I might just use it for a light dinner!)
Variations on this Potato Frittata Recipe
This was a pretty basic recipe, one that’s very versatile, but it’s a delicious and healthy meal. Here are some ways I’m thinking of changing it up next time, (still ending up with a savory breakfast).
Cheddar Cheese: This is the most obvious addition! Shredded cheese is always a good choice. I only skipped it because I needed need or want the additional calories. For the last ten minutes of the bake, add a full cup of grated cheese.
Mozzarella cheese: This might be another fun option. Top with melted cheese. Delicious!
Veggies: I almost added a bag of frozen mixed veggies to this recipe, but since I’d never made it before I wasn’t sure how that might affect the outcome. Next time, I might do that!
Bacon: If you don’t want to use sausage, you can substitute bacon. You can even use turkey bacon.
Hamburger and onion: I love this delicious combination and think it would be great. I would probably serve this with my homemade salsa on the side.
Fresh herbs: Add any herbs you like! This dish is perfect for them!
Sour cream: Add a dollop to the top of each slice or stir some into the mix.
Red bell peppers: This is another fun option. Chop up peppers and add them to the egg mixture before baking.

- 1 tablespoon olive oil
- 7 whole eggs
- 1/2 cup whole milk
Instructions
