There are some recipes that come from years of experience, and these Wedding Cake Bites are one of them.

With four daughters, I've celebrated four weddings of my own. Over the years I've baked wedding cakes for family, friends, church events, and special occasions. Even though I no longer bake professionally, I still say yes when someone special asks. In fact, I'll be making another wedding cake next week as a gift for a dear friend.

The best part? They're incredibly soft. Unlike my cookie cups, where the cookie and filling provide contrasting textures, these are soft from beginning to end. The tender almond cake and creamy filling practically melt together into what I can only describe as a little almond cloud.

You will find a full printable recipe card at the bottom of this post but here's a quick peek at what you're going to need to make these cake bites. These are simple ingredients and (as is the case with so many of my recipes) it all starts with a box of cake mix!

For the Cake Bites

  • 1 white cake mix
  • 3 egg whites
  • Β½ cup vegetable oil
  • β…“ cup milk
  • 1 teaspoon almond extract
  • 1 teaspoon clear vanilla extract

For the Almond Cream Cheese Filling

  • 2½–3 cups powdered sugar
  • Β½ teaspoon almond extract
  • 1 teaspoon clear vanilla extract

How to Make Wedding Cake Bites

Step One: Prepare the Batter

Preheat your oven to 350 degrees Fahrenheit. Spray two mini muffin pans generously with Baker's Joy.

Combine the cake mix, egg whites, oil, milk, almond extract, and clear vanilla in a large mixing bowl. Beat until smooth.

Using a small cookie scoop, fill each muffin cavity about halfway. My batch yielded approximately 40 cake bites.

Bake for 10–11 minutes, or until the tops are just set.

Step Two: Create the Wells

This step is important!

As soon as the pans come out of the oven, immediately press a well into the center of each cake bite using the back of a wooden spoon or a tart shaper. Don't wait for them to cool. These little cakes set up very quickly, and it's much easier to create a deep cavity while they're still piping hot.

Allow the cake bites to cool completely before filling.

Step Three: Make the Filling

Beat together the butter, shortening, and cream cheese until smooth and creamy.

Add the almond extract and vanilla.

Gradually beat in the powdered sugar until the frosting reaches a smooth, pipeable consistency.

Transfer the filling to a piping bag.

Step Four: Fill and Decorate

Pipe the almond cream cheese filling generously into each cooled cake bite.

Decorate with white pearl sprinkles, sanding sugar, sugar flowers, or white chocolate flowers.

Instructions

  1. Preheat oven to 350Β°F. Spray two mini muffin pans generously with Baker's Joy or another baking spray containing flour.

  5. To make the filling, beat together the butter, shortening, and cream cheese until smooth and creamy. Add the almond extract and vanilla.
  6. Gradually beat in the powdered sugar until the frosting is smooth and stiff enough to pipe.
    Transfer the filling to a piping bag fitted with a large round or star tip. Pipe the filling into the center of each cooled cake bite.
