The day before I made these brownies, I had been rereading one of my posts about old-fashioned church potlucks. That got me thinking about Black Magic Cake, the deeply chocolatey cake so many church ladies made through the years.

Once the thought entered my head, I couldn’t seem to shake it. I wanted a piece of that rich chocolate cake, but I certainly didn’t need a whole cake sitting in my kitchen. So, I began wondering if I could turn those familiar Black Magic flavors into cookies instead.

I was picking up my granddaughter for volleyball practice that afternoon, and since this was her first season playing school volleyball, cookies for the team sounded like the perfect plan. The cookies were wonderful—soft, rich, and so chocolatey that they reminded me of little brownie bites.

And that, of course, led to another question: If Black Magic Cake could become cookies, why couldn’t it become brownies?

Before long, I had another bowl on the counter and a pan of brownies in the oven. It turned out to be a very Black Magic kind of day!

Why Are They Called Black Magic Brownies?

The name comes from the classic Black Magic Cake that inspired them. There isn’t any actual magic involved, of course, but something remarkable happens when cocoa and coffee come together.

Coffee is the mysterious little “secret ingredient” in many deeply flavored chocolate cakes. It doesn’t make the finished dessert taste like a cup of coffee. Instead, it intensifies the cocoa and gives the chocolate a darker, richer flavor.

These brownies use just enough instant coffee to deepen the chocolate without overpowering it. Between the cocoa, semisweet chocolate chips, brown sugar, and melted-chocolate topping, every bite is rich and decadent.

These brownies rose slightly in the oven and then settled considerably as they cooled. Once cut, they were approximately three-quarters of an inch thick.

The center brownies were incredibly fudgy—almost truffle-like—but they were not underbaked. The brownies around the edges were absolute perfection, with enough structure to hold their shape while remaining moist and rich.

I added a small amount of baking powder and baking soda to give the batter just a touch of lift. I’m glad I did! The brownies were still exceptionally fudgy, but those leaveners gave them enough structure to keep them from becoming overly gooey.

Because they are so rich, I cut them into small squares. Trust me: a little Black Magic goes a long way!

How to Make Black Magic Brownies

These brownies come together quickly, so start by preheating your oven to 350°F. Prepare an 11×7-inch baking dish with nonstick cooking spray.

Melt the butter and place it in a large mixing bowl. Add the vegetable oil, granulated sugar, and brown sugar. Stir until thoroughly combined.

Add the eggs and vanilla, then mix until smooth.

In a small cup, dissolve the instant coffee in one tablespoon of buttermilk. Add the coffee mixture to the wet ingredients and stir well.

In a separate bowl, whisk together the cocoa powder, all-purpose flour, salt, baking powder, and baking soda. Add the dry ingredients to the wet ingredients and stir only until everything comes together. Avoid overmixing.

Fold in the semisweet chocolate chips.

Spread the batter evenly in the prepared 11×7-inch pan.

Bake for approximately 28–30 minutes. The edges should look fully set, and a toothpick inserted a couple of inches from the edge should come out with thick, moist crumbs. You don’t want to see wet batter, but don’t wait for the toothpick to come out completely clean.

Remove the brownies from the oven and immediately scatter additional chocolate chips over the hot surface. Let them sit for several minutes, then gently spread the softened chocolate across the brownies.

Allow the brownies to cool completely before cutting. The center will continue to set as the pan cools, so this waiting period is important.

I didn’t make this pan just to keep at home. I took the brownies to a gathering of the ladies in my cruisers group—the friends I’ll be traveling with this weekend. They loved them!

What Makes These Brownies So Fudgy?

Several ingredients work together to produce that rich texture. Melted butter supplies flavor, while a tablespoon of vegetable oil helps keep the brownies moist. Brown sugar adds additional moisture and a subtle caramel note, and two eggs help bind the batter without turning it into cake.

For clean slices, use a sharp knife and wipe the blade between cuts.
