An Accidental Masterpiece
Sometimes the best recipes happen completely by accident.
That’s exactly what happened with these White Chocolate Cranberry Crunch Bars. I had a few cups of Rice Krispies left in the pantry, a bag of craisins calling my name, and a craving for something chewy, crunchy, and sweet. Before long, this festive little treat was born!
Even funnier? I made these in May for a Thanksgiving-style potluck with my church small group. (Yes, we’re celebrating Thanksgiving in the springtime. And honestly? I’m not mad about it.) Since cranberry always feels cozy and holiday-ish, these bars fit right in beside the casseroles, turkey, and my beloved pecan pie bars.

These bars are delightfully imperfect in the best possible way. The mini chocolate chips melted a bit into the marshmallow mixture, creating swirls of chocolate throughout the bars. What started as a kitchen mishap actually turned into something rich, chewy, and incredibly delicious.
And once I spread that creamy white chocolate over the top and sprinkled on extra craisins and mini chips? Well…let’s just say nobody at the potluck complained on whit. In fact, one of our guests ate three of these!

Ingredients

You will find a full printable recipe card at the bottom of this post but here's a little peek at what you're going to need. You might already have these items on hand in your kitchen. I had the Rice Krispies left over from my Rocky Road Rice Krispy treats!
- 3 tablespoons butter
- 1 package mini marshmallows (10 ounces)
- 3–4 cups Rice Krispies cereal
- 1 cup quick oats
- ¾ cup craisins
- ½ cup mini semi-sweet chocolate chips
- 1 cup white chocolate chips
- ¼ cup chopped pecans
- 1 teaspoon vegetable oil or coconut oil
Optional toppings:
- extra craisins
- extra mini chocolate chips
How to Make White Chocolate Cranberry Crunch Bars

These came together in (literally) minutes!
Grease an 8x8 or 9x9 baking dish. Add a sheet of parchment paper, bringing the edges up the sides, and spray it with non-stick spray, as well.
Place marshmallows and butter in a large microwave safe bowl.
Heat in microwave in 30-second increments until butter is melted and marshmallows are soft. Stir well.
Add Rice Krispies and oats and stir until coated.

Allow the mixture to cool for a couple of minutes before stirring in the craisins and mini chocolate chips. (Trust me on this one. If the mixture is too hot, the chocolate chips will melt into the bars. Not that I would know anything about that…)

Press the mixture gently into the prepared pan.

In a microwave-safe bowl, melt the white chocolate chips with the oil in 20-second increments, stirring between each one until smooth enough to spread or drizzle.
Spread or drizzle the white chocolate over the bars.

Top with extra craisins and mini chocolate chips.

Refrigerate for about 20–30 minutes to help the topping set before slicing.
Lift parchment paper to release the bars from the pan.

Cut into squares.

Serve and enjoy!

Storage
Store tightly covered at room temperature for up to 3 days or refrigerate for longer freshness.
Tips and Tricks
- Don’t compact the bars too firmly or they can become dense.
- Quick oats work better than old-fashioned oats in this recipe.
- A little oil helps thin the white chocolate for easier spreading.
