When Plan A Doesn’t Happen (Welcome to My Kitchen)
I wish I could tell you this recipe was carefully planned… but that’s almost never how things go around here.
I fully intended to make these muffins with a spice cake mix. I could already taste them—warm spices, tender crumb, that perfect fall flavor.
Then I opened the pantry.
No spice cake mix.
Not even close.

So instead of giving up, I took a look around.

These muffins are the result of that little kitchen pivot—and honestly? I don’t think I’ll ever go back. They’re soft, rich, full of cinnamon apple flavor, and that buttery streusel on top takes them completely over the edge.

Muffins
- 1 box white cake mix
- 2 large eggs
- ½ cup melted butter
- ¾ cup milk
- 1 to 1½ cups finely diced apple (about ¼-inch pieces)
- 1½ teaspoons apple pie spice (or pumpkin pie spice)
- ½ teaspoon cinnamon
Note: You can use a spice cake mix in place of white. Just skip the added spices.
Optional:
- ½ cup chopped pecans
- ⅓ cup craisins
Streusel Topping
- ¼ cup brown sugar
- ¼ cup all-purpose flour
- 2 tablespoons cold butter
- Pinch of cinnamon
How to Make Cinnamon Apple Muffins









These come together so easily, friends! In fact, you might not go back to making muffins the "from scratch" way after you see how simple this method is.
- Preheat oven to 350°F. Line a muffin tin with cupcake liners.
- Mix the batter: In a large bowl, combine cake mix, eggs, melted butter, and milk. Stir until well combined.
- Add the apples and spice: Fold in the diced apples, apple pie spice, and cinnamon. If using pecans or craisins, add them now.
- Make the streusel: In a small bowl, combine brown sugar, flour, and cinnamon. Cut in cold butter with a fork until crumbly.
- Fill the muffin cups: Scoop batter into liners, filling about ¾ full.
- Top with streusel: Generously sprinkle streusel over each muffin.
- Bake: Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool slightly and enjoy: Let muffins cool for a few minutes before serving.
- Store in an airtight container in the refrigerator. They should stay fresh for 4-5 days.

What to Expect from these Muffins

As a rule, I don't reach for muffins before cupcakes. (Hey, I love frosting!) In this case, however, I'm all in. I love, love, love apple in muffins and these did not disappoint. The moisture and sweetness from the apples was a lovely contrast against the spices and the crunch of the pecans.
And those craisins? I know it might sound like an odd addition, but they were absolutely perfect! They softened a bit while baking and offered a complementary flavor profile and additional sweetness.
And can we talk about that streusel on top? It's not heavy. In fact, it went on more sugar than crumble, so I wasn't holding out hope that it would work out. . .but it did! It added more crunch and sweetness. All in all, I would have to say this muffin is a rousing success!
