Cookies

  • 1 box strawberry cake mix
  • 2 eggs
  • ½ cup vegetable oil

Strawberry Glaze

  • 1 cup powdered sugar
  • 1–2 tablespoons milk
  • ¼ teaspoon strawberry extract (optional)
  • Pink or Valentine sprinkles

How to Make Strawberry Valentine Cake Mix Cookies

Like I said, these are just about the easiest and fastest cookies I've made! And so simple! Here's how you're going to do it.

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Make the dough.
    In a large mixing bowl, combine the strawberry cake mix, eggs, and oil. Stir until a soft dough forms.
  3. Scoop the cookies.
    Using a medium cookie scoop, place dough balls onto the prepared baking sheet.
  4. Bake.
    Bake for 10–11 minutes or until the edges are set and the centers look slightly soft.
  5. Cool.
    Allow cookies to cool completely before adding glaze.

Make the Strawberry Glaze

In a small bowl combine:

  • powdered sugar
  • milk or water
  • strawberry extract (if using)

Stir until smooth. Adjust the milk (or water) as needed to reach a drizzle consistency.

Drizzle the glaze over the cooled cookies and immediately top with Valentine sprinkles. It's important to do this before the glaze sets.

I'm on a diet so I wasn't able to enjoy these to the fullest, but the bite I took was absolutely loaded with strawberry flavor! (I'm a strawberry cake fan, and this was just as enjoyable.) That glaze on top? It's the chef's kiss, y'all! It add just the right touch of sweetness. And doesn't it make the cookies look adorable?
