King Ranch Chicken? What's That?

King Ranch Chicken is a classic Tex-Mex casserole named after the famous King Ranch in Texas. For those who aren't familiar with the layout of our great state, this ranch is near Kingsville, along the Gulf Coast.

Despite its name, the dish is not directly associated with the ranch itself. But here in Texas it's a staple! It's a hearty, cheesy, and flavorful comfort food typically made with layers of ingredients like shredded chicken, corn tortillas, creamy sauce, and cheese.

We love our King Ranch Chicken, but I've never contemplated using it in puff pastry before. Until now. The idea hit like a bolt of lightning and I'm so glad it did. Now that I've made these, I'm hooked. You will be too, I promise!

So, let's get baking!

King Ranch Chicken Rolls Ingredients

King Ranch Chicken Rolls from Out of the Box Baking
  • 1 rotisserie chicken, deboned/shredded
  • 1 8-ounce package grated cheddar
  • ½ cup sour cream
  • 1 small can Rotel
  • 1 can cream of chicken soup (10.5 ounce)
  • 1 can cream of mushroom soup (10.5 ounce)
  • 1 teaspoon chili powder 
  • ½ teaspoon cumin
  • ½ onion, sautéed 
  • 3 packages puff pastry
  • 1 egg, whisked

How to Make King Ranch Chicken Rolls

Preheat oven to 425 degrees Fahrenheit. 

Finely chop half an onion and sautee in a tablespoon of oil. Set aside. 

Combine soups, sour cream, grated cheddar, spices, and Rotel in a large bowl. Mix well. 

Add shredded chicken (about 2-3 cups) and onion. 

Stir to coat.

Roll out puff pastry and cut each rectangle into three even rectangles (like the picture)

Gently spoon king ranch chicken mixture down the middle of each piece (like the picture)

Brush the edges of the puff pastry with water and press down, then seal with a fork. 

Using a pizza cutter, divide each piece into six pieces. 

Don’t worry too much about the filling falling out. You can gently nudge it back in with a small spoon. 

Carefully place on parchment lined cookie sheet.

Brush with whisked egg. 

Place in preheated oven and bake for 15-17 minutes or until golden brown. 

Remove and place on wire rack to cool.

If any of the chicken mixture has leaked out, gently nudge it back in with a small spoon while they are still warm.

They're crisp, they're creamy. . .they're dreamy! I loved, loved, loved these--from the spicy interior to the light, crisp exterior. I can't believe I actually came up with such a fun idea, and it worked! (Hey, these things don't always work out like you think they will.) I can't wait to make these for an upcoming Christmas event.
