Puff Pastry Pecan Pie Bites

If you’re a fan of pecan pie but you’re looking for a quick, tasty dessert, this is the recipe for you! In this post I’m going to show you how to make delicious Pecan Pie Bites using a simple sheet of puff pastry. 

Mini Pecan Pies? Yes, Please! 

Recently I made a delicious new-to-me recipe: Baklava Bites. The recipe called for a simple sheet of puff pasty cut into pieces and pressed into a mini cupcake tin. Then the baklava filling was added. 

I have to tell you, those Baklava bites were delicious and a lot easier than baking a whole tray of baklava! 

I’m a fan of most nuts, but since it’s the holiday season, I’ve been looking for ways to mix up some of my pecan recipes. 

I’ve got a delicious pecan pie recipe. And an amazing pecan pie cheesecake bars recipe (which I highly recommend). I’ve got a lot more, which I’ll post at the end of this recipe. But today I wanted to merge two different ideas: pecan pie and baklava bites. 

In other words, I wanted to take puff pastry and make a pecan pie filling instead of baklava filling. 

So, that’s exactly what I did here. I managed to create a tasty new recipe that’s absolutely delicious and so easy to make! 

Pecan Pie Bite Ingredients

You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need. These are simple ingredients you might already have on hand in your pantry or refrigerator. 

  • store-bought puff pastry
  • finely chopped pecans
  • salt
  • brown sugar
  • melted butter
  • light Karo Syrup (light corn syrup)
  • large eggs

How to Make Puff Pastry Pecan Pie Bites

These are so simple. I can’t believe I’ve never made them until now. 

Start by preheating the oven to 375 degrees Fahrenheit. 

Use Bakers Joy (or other) to prep your mini muffin pan. (This recipe will make 24 mini muffin sized bites or 12 regular cupcake pan treats.)

Make your filling.

In a medium bowl, melt the butter and add the brown sugar, Kara syrup, eggs, and salt. Stir well. Add chopped pecans and mix well. Set aside. 

Unroll the thawed puff pastry sheet.

Cut into 24 even sized pieces.

Press one square into each spot in the mini cupcake tin (mini muffin tins).

Using a teaspoon or a small scoop, fill the 24 slots with pie filling on top of the dough.

You should have just enough filling. 

Place the cupcake tray into preheated oven and bake for 15 – 18 minutes or until bites turn golden brown. 

Remove and place pan on wire rack to cool.

When you can easily handle the puff pastries, remove them from the pan and place directly on wire rack to continue cooling. Mine had to be pried loose with a sharp paring knife because they overflowed a little, but I managed to get them out just fine.

Store leftovers in airtight container or tightly covered in plastic wrap. They should stay good at room temperature for 4 – 5 days. 

What to Expect from these Mini Pecan Pie Bites

These are going to be perfect for your next holiday party, y’all!

If you love a good pecan pie but you’re looking for something far simpler, you’re going to love these. I’m over the moon that these turned out as beautifully as they did! This is the perfect mini treat.

I loved my Baklava Bites, but I’ll be honest: I prefer pecans. So, I’m really, really glad I gave this recipe a try.  These are like little mini pies, just enough to fit in the mouth!

These bites were softer than the baklava bites because the liquid content is slightly higher, and they have an amazing flavor.

All in all (in spite of my filling overflowing a bit, creating stickage) I have to say these were a delightful success. I think these would be great for a cookie exchange!

Variations on this Perfect Sweet Treat

I love these so much but I’m already thinking of ways to mix them up. 

One egg instead of two: I think cutting back a bit on the liquid would be good to lessen the risk of overflow. 

Maple extract: I love the idea of adding a teaspoon of maple extract to this recipe. (I wish I’d done that!) 

Toasted pecans: I could have toasted the pecans ahead of time to make this recipe even richer! (I taste mine in a dry skillet on the stovetop.) 

Walnuts: You can swap out walnuts for pecans if you prefer. 

Chocolate: Want to add a chocolate base? Place a couple of chocolate chips into the crust before adding the filling. 

Pie crust: You can always use pie crust (pie dough) in place of the puff pastry. It won’t be as crispy but it will still be flaky and delicious.

Vanilla extract: Next time I think I’ll add a teaspoon of vanilla extract to my pecan pie filling.

Maple syrup: If I add walnuts next time, I’ll probably add a tablespoon of maple syrup. Yum!
