If you love the crunch of almonds and coconut but the richness of a chocolate truffle, have I got a treat for you! In this post I’m going to show you how to make easy homemade Almond Joy Truffles, loaded with flavor and texture.
What is Almond Joy?
And Almond Joy candy bar has a chewy coconut center with whole almonds, surrounded by rich dark chocolate that crunches when you bite into it.
This dessert takes those same flavors but puts a new spin on them. Instead of a white center, you’ll bite into a lush dark chocolate ganache. But what you’ll find, buried without the layers of chocolate bliss, are tiny bits of diced coconut and almonds.
The idea for this truffle came on the day I made Dark Chocolate Raspberry Truffles with my friend, Anita. I remember commenting, “These would be really good with chopped coconut and almonds inside.”
So, I came home and made some! Instead of coating them in unprocessed Dutch cocoa powder (like the Dark Chocolate Raspberry Truffles) I decided to hold back some of the coconut-almond mixture to roll the truffles in.
And y’all. . .can I just say. . .wow! These are unbelievably good, but they’re also simple enough to make in a hurry.
It’s getting easier and easier to come up with sweet treats to impress your guests, that’s for sure!
Almond Joy Truffle Ingredients
You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need to make these truffles. These are simple ingredients you might already have on hand.
- milk chocolate chips
- semi-sweet (or dark) chocolate chips
- shredded coconut
- chopped almonds
- heavy cream
How to make Easy Almond Joy Truffles
Like my Dark Chocolate Raspberry Truffles, these came together with ease. Just a few quick steps and you’ll have Almond Joy Truffles ready for your guests.
Combine coconut flakes and almonds in your food processor. Grind them together.
If you don’t have a processor you can finely chop them. You’ll notice from the picture that processing them produces a common color (you can’t distinguish the coconut from the almonds). That’s what you want.
Set almond coconut mixture aside.
In a separate microwave safe bowl place chocolate chips and heavy cream.
Melt in microwave in 30-second intervals. Mine took a minute and a half total. (Aren’t you glad you don’t have to use the double boiler for this process?)
Stir melted chocolate until smooth and creamy.
Add half of the almond coconut mixture.
Stir well.
Place bowl of chocolate mixture in the refrigerator for an hour or until it’s the texture of toothpaste.
Prepare a work area: Place a piece of wax paper down on a cookie sheet or other firm surface.
Use a cookie scoop to scoop a dozen balls of chocolate/nut mixture onto wax paper. You want to make one inch balls.
Place mounds in refrigerator to firm up for about 20 minutes.
Remove and roll in what’s left of the almond-coconut mixture.
Your truffles are now ready to serve.
Store in refrigerator up to a week.
You can freeze these in an airtight container (like a freezer bag) up to two months.
What to Expect from this Recipe
If you like Almond Joy candy bars you’re going to love these. They’re not terribly heavy in sweet coconut or nuts but the texture and taste are just enough to make you want more.

In fact, they’re so addictive that I decided I’d better get them out of my house. I passed them off to a friend who was headed up to her workplace. I knew she could share them with her coworkers. Otherwise, I probably would’ve made a feast of them.
Yes, they’re that good.
The chocolate is so creamy and decadent. Seriously. It’s swoon-worthy.
And the finely ground nuts and coconut? I absolutely adore the texture. It’s really the perfect little treat. I can’t wait to make more of these for my friends and family. This is one of those candy recipes you’ll use again and again!
Variations on this Recipe
Now that I know how simple it is to make truffles, I plan to make a wide variety. I’m looking at the following flavors:
Coconut: If you want to skip the almonds, go ahead. You don’t even have to process the coconut. Just add half a cup to the ganache and roll in coconut flakes. Easy-breezy Mounds bar! If you like, you can use unsweetened coconut flakes.
Caramel and chocolate: I’m not sure how I’ll merge those two flavors, but that will be my next venture, for sure!
Turtle Truffles: Caramel, pecans, and chocolate? Yes, please! I’ll probably roll these in crushed pecans for added texture.
Sweetened condensed milk or coconut milk: You can substitute either of these for the heavy cream if you like.
Protein powder: If you want to make these more healthy you can add a scoop of protein powder to the recipe.
Layer of dark chocolate: If you like, you can dip these Almond Joy bars into a thin layer of dark chocolate before rolling in processed coconut and nuts.
