Yummy Double Mint Chocolate Cookies

If you have followed me for any length of time you know that I’m nuts about mint chocolate.

Check out my Mint Oreo Trifle recipe for proof. (Let’s pause for a moment to swoon.)

Today I’m going to introduce you to another favorite, my Double Mint Chocolate Cookies. 

Why another Mint-Chocolate Recipe?

First, we’ve established that folks love mint. (Well, most do.)

Next, we’ve settled on the fact that they adore chocolate. (I mean, hello. . .chocolate!) Finally, when those two are combined, angel choirs begin to sing. People spontaneously burst into song. Then, they dance around the kitchen with toe-tapping joy. 

In short, they celebrate the marriage of these two ingredients. And you’ll celebrate too, as soon as you taste the combination in these rich, gooey, minty chocolate cookies. These yummy bites of deliciousness are “doubly” good because of the addition of cocoa powder. It’s chocolate on chocolate on mint. And, oh my! The result is powerful!

A few weeks back I took some of these cookies to an event I was hosting. My guests flipped (in a good way). They couldn’t get enough of my cookies. They loved them so much that I made them again a short while later, this time stuffed with my favorite York Peppermint Mousse, (which you can find in my Mint Oreo Trifle recipe).

I stuffed some of that creamy mousse between two cookies and. . .voila! A sandwich guaranteed to leave you begging for more. (Boy oh boy, did folks beg for more!)

By now you’re probably drooling. I know I am. So, let’s get these cookies in the oven! 

How to make Double Mint Chocolate Cookies

Double Mint Chocolate Cookies are gooey, rich, and loaded with minty goodness!

INGREDIENTS FOR DOUBLE MINT CHOCOLATE COOKIES: 

Most of these ingredients are pretty basic. You’ve probably got everything you need in your pantry or refrigerator right now.

You’ll find a full printable recipe card at the bottom of this post, but take a quick look at what you’ll need:

  • 2 sticks (1 cup) salted butter (softened)
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 2 ¼ cups flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 bag Andes mints (mint chocolate chips)

INSTRUCTIONS FOR BAKING DOUBLE MINT CHOCOLATE COOKIES: 

  • Place the softened room temperature butter and sugars in a large mixing bowl and mix at medium speed until smooth and creamy. Add vanilla and eggs and mix until incorporated.
  • In a separate large bowl, whisk together the dry ingredients (flour mixture). Add them to the wet ingredients, a little at a time. 
  • Now it’s time for the good stuff! Add the full bag of Andes (or other) mint chips. (Yum!) Beat a low speed.
  • Prepare your baking sheet by adding parchment paper. I use Nordic Ware pans, along with the perfect parchment sheets that are pre-cut to fit the half-sheet perfectly!
  • Scoop by spoonful onto the parchment-lined cookie sheets. Cookie dough balls should hold their shape.
  • Bake in a preheated oven at 375 degrees for 10 minutes (approximately) or until the cookies are set.
  • Place on wire rack to cool.
  • Store in airtight container for 3-4 days. Cookies can be placed in freezer-safe bag and frozen for up to two months.

Variations on these Yummy Chocolate Mint Cookies:

Looking for a way to change up these delicious chocolate mint cookies?

  • If you don’t want as much chocolate, leave the unsweetened cocoa powder out of the recipe and just use the mint chocolate chips in a traditional cookie dough instead of chocolate cookie dough. (They won’t be double mint chocolate, they’ll be single mint chocolate. . .ha!)
  • Looking for an “Andes” color scheme? No problem! Add a tiny bit of royal icing drizzle in a soft green.
  • Why not make chocolate peppermint cookies? Instead of adding mint chocolate chips, add crushed peppermint sticks!
  • Looking for a gluten free option? Make these cookies with almond flour instead of all-purpose flour.
  • Want more of a mint flavor? Add a teensy-tiny bit of peppermint extract.

Chocolate on chocolate on mint! These gooey, minty cookies will leave you swooning! Hot from the oven or filled with mint chocolate mousse as a sandwich cookie, they're the perfect treat for mint chocolate lovers.

Ingredients
