Spice Cake Bites with Biscoff Cookie Butter Filling
These easy Spice Cake Bites with Biscoff Cookie Butter Filling are the perfect fall dessert! Made with cake mix, they're ideal for Thanksgiving, bake sales, and holiday gatherings.

There's just something magical about the flavors of fall. Warm spices, cozy afternoons, and desserts that pair perfectly with a hot cup of coffee or tea make this my favorite baking season.
These little Spice Cake Bites check all the boxes.
They're soft and tender, filled with creamy Biscoff cookie butter, and finished with a sprinkle of crunchy cookie crumbs for a bakery-style finish. Best of all, they start with a simple boxed cake mix, making them one of those desserts that looks fancy without requiring a lot of work.

I was pleasantly surprised by how well the cookie butter piped straight from the jar. Using a 1M piping tip, it held its shape beautifully, creating pretty swirls on top of each cake bite. I almost left them just like that, but in the end I'm so glad I added the crushed Biscoff cookies. That little bit of crunch was exactly what they needed.
Whether you're baking for Thanksgiving, a fall bake sale, a church gathering, or simply treating your family on a cool afternoon, these little cake bites are sure to disappear quickly.
What to Expect from This Recipe
These bite-sized spice cakes are soft, moist, and full of warm cinnamon spice. The creamy cookie butter filling adds rich caramel flavor, while the crushed Biscoff cookies provide the perfect finishing crunch. They're easy enough for beginning bakers but pretty enough to serve at holiday parties and special occasions.
Ingredients

You will find a full printable recipe card at the bottom of this post, but here's a look at what you'll need to make these delicious cake bites.
For the Cake Bites
- 1 (15.25-ounce) spice cake mix
- 2 large eggs
- Β½ cup (1 stick) butter, softened
- β cup milk
- Baker's Joy or nonstick baking spray
For the Filling and Topping
- 1 jar Biscoff Cookie Butter
- 6β8 Biscoff cookies, crushed
How to Make Spice Cake Bites
Preheat your oven to 350 degrees Fahrenheit.
Spray a mini muffin pan generously with baking spray.

In a large mixing bowl, combine the cake mix, eggs, softened butter, and milk. Mix until well combined. The batter will be much thicker than traditional cake batter.
Fill each muffin cavity about two-thirds full.

Bake for 11 to 12 minutes, or until the tops spring back lightly when touched.

Allow the cake bites to cool in the pan for about five minutes then use a tool to create a well in each cake.

"Well out" all of the cakes.

Use a paring knife around the edges of each cake bite to lift them from the pan. Place on a cooling rack to continue filling and decorating.

Using a 1M piping tip, pipe generous swirls of Biscoff cookie butter onto each cooled cake bite.

Sprinkle immediately with crushed Biscoff cookies.

If you like, stick a cookie piece on top to decorate.

Serve immediately or store in an airtight container.
Storage
Store these cake bites in an airtight container at room temperature for up to three days.

They also freeze beautifully. Freeze before decorating, then thaw and pipe the cookie butter just before serving for the freshest presentation.

Friends, these are a delicious mergence of flavors and textures. The lovely cake crumb, the smooth, creamy cookie butter filling, the crunch of those Biscoff cookies on top. . .it all comes together in a way that will have your guests coming back for more.
I'm convinced these are going to be a hit during the holidays. I can almost imagine folks nibbling on these cake bites while sipping a caramel macchiato or cup of Earl Grey tea.
Variations
These are so great just like they are, but I always love to change things up. Here are some fun variations to try when you make your spice cake cups.
Add White Chocolate
A drizzle of melted white chocolate pairs beautifully with the warm spice flavors.
Sprinkle with Cinnamon
Dust the finished cake bites with a pinch of cinnamon for even more cozy flavor.
Try Pumpkin Spice
Add a teaspoon of pumpkin pie spice to the batter if you'd like an even bolder fall flavor.
Holiday Presentation
Arrange these cake bites on a wooden serving board with cinnamon sticks, tiny pumpkins, and fall leaves for a beautiful Thanksgiving dessert display.
