The Story Behind this Recipe
I actually made these muffins for the kids in my baking class at my granddaughter’s school. This semester we're doing "Bakes Around the World" and today was Mexico day. We made sopapillas in the class, but I had some bananas that needed to be baked, so I came up with this churro-themed recipe to bake ahead.
Since I was baking for two classes I doubled the recipe. (The recipe, as written, only makes a dozen muffins.) The good news? This recipe doubles beautifully if you're baking for a crowd. I baked them in advance, and when I got to the classroom I had the kids lightly coat the tops in melted butter, then dip them into the cinnamon sugar mixture. (Yum!)

Banana Churro Muffin Ingredients

For the Muffins
2 ripe bananas, mashed
½ cup granulated sugar
¼ cup brown sugar
⅓ cup melted butter
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
¼ cup milk or buttermilk
For the Churro Coating
¼ cup melted butter
½ cup sugar (granulated or turbinado/raw sugar)
1 teaspoon cinnamon
How to Make Banana Churro Muffins

These come together so easily and quickly!
Step 1: Preheat the Oven
Preheat your oven to 350°F. Line a muffin tin with paper liners or grease lightly.
Step 2: Mash the Bananas
Place the ripe bananas in a bowl and mash them until mostly smooth.
Step 3: Mix the Wet Ingredients

Add the sugar, brown sugar, melted butter, egg, vanilla, and milk. Stir until well combined.
Step 4: Combine the Dry Ingredients


In a separate bowl whisk together:
- flour
- baking powder
- baking soda
- salt
- cinnamon
Step 5: Make the Batter

Add the dry ingredients to the wet ingredients and stir gently until just combined. Avoid overmixing.
Step 6: Fill the Muffin Pan

Fill each muffin cup about ¾ full.
Step 7: Bake

Bake for 16–18 minutes, or until a toothpick inserted in the center comes out clean.
Let the muffins cool for about 5 minutes before coating.
Step 8: Add the Churro Coating



In a small bowl mix the sugar and cinnamon.
Brush each warm muffin lightly with melted butter, then roll it in the cinnamon sugar mixture.
This creates that classic churro-style crunchy coating.
