Let's Make Scones from Cake Mix!
Yep! On this site we make a plethora of baked goods out of a simple box of cake mix. So, why not scones?
This idea came from a gift from my step-mom. Jeanene sent me several boxes of cake mix for Christmas this year and I was thrilled to see the orange supreme. I happen to love orange cake. It's one of my favorites.
I decided to use the box of cake mix to make something else I love: scones. And I had just the right thing to add to turn this into a holiday-flavored scone: cranberries.
In my case, I had craisins, (not fresh cranberries), but I knew from experience that I could take those craisins, soak them, and they would work just fine.
(Hint: They did!)

Cranberry Orange Scone Ingredients
You will find a full printable recipe card at the bottom of this post, but here's a quick peek at what you'll need to make these delicious scones.

- 1 box Orange Supreme cake mix
- 1 ¾ cups all purpose flour
- 1 stick (½ cup) cold butter
- 1 egg
- ½ cup heavy whipping cream
- 1 cup soaked (plumped) craisins
- Extra flour for dusting
GLAZE:
- 1 cup powdered sugar
- 2 tablespoons orange juice
How to Make Cranberry Orange Scones
Soak 1 cup of craisins in half a cup of water for 15-20 minutes.
Preheat oven to 400 degrees Fahrenheit.
Grate butter into a the bowl of a stand mixer or food processor. Add flour and mix until butter incorporates. Add cake mix, egg, and heavy cream. Mix well until it forms a thick, pasty dough. Drain craisins and add them to dough. Gently mix, only until incorporated. (You don’t want to over-mix.)
Divide dough in half. Roll into two balls.
Lightly flour two pieces of parchment paper.
Place one dough ball onto one paper and pat down. Shape into a circle and pat to about 1 inch thickness. Use a sharp knife or pizza cutter to cut into eight triangles.
Now repeat with the second ball of dough.

Separate pieces and place on a parchment lined baking sheet and place in preheated 400 degree oven. Bake for 15 - 17 minutes or until set.
Remove from oven and set on wire rack to cool.
Make your glaze. Combine orange juice and powdered sugar. Mix well until smooth.
Drizzle glaze over the scones and allow to set up.
Serve and enjoy!

Store leftovers in an airtight container at room temperature. They will stay fresh for 2-3 days. You can freeze these to eat later, if you like.
