Easy Pound Cake (Doctored Cake Mix)

If you love a yummy flavorful pound cake, loaded with flavor and texture, but you’re in a hurry, this is the recipe for you! In this post I’m going to show you how to make a quick pound cake using a simple box of cake mix. 

Pound Cake. . .from a Box? 

I know. Sounds crazy. After all, pound cake is a pound of this, a pound of that. You rarely heard of one that involves a box of cake mix. 

In this case, a simple but perfect pound cake truly is possible using a box of white or yellow cake mix. I happened to have white on hand so that’s what I used. 

I should say up front that this version of a pound cake is absolutely delicious but it's lighter and fluffier than the homemade version. I loved it because the butter flavor came shining through!

Pound Cake Ingredients

You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need. These are super simple ingredients you can pick up at any grocery store. 

  • 1 box white cake mix
  • 1 cup (2 sticks) melted butter
  • 4 large eggs
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

That’s it! Just a handful of ingredients. 

How to Make Pound Cake from a Boxed Cake Mix

This comes together easily and quickly. If you’re feeding a crowd you can double this mix, especially if you’re cooking it in a tube pan, as I did. (Mine turned out pretty tiny, so I probably should have used a bundt pan for mine!) 

Preheat oven to 350 degrees Fahrenheit. 

Spray a tube pan or bundt pan with Baker’s Joy or other non-stick baking spray (with flour added). 

In a medium bowl melt butter.

Add eggs, vanilla, and heavy cream. Whisk it all together.

Now add the cake mix. 

Mix well. You’ll have a thick, creamy batter. Luscious! Just what you want for a pound cake.

Scoop the batter into your prepared pan. As I mentioned above, if you’re using a tube pan you might want to double the recipe to get a nice-sized cake to serve your family or guests. I didn’t mind a smaller version.

Place in preheated oven and bake for 40 minutes or until golden brown. (Note, you can bake this low and slow at 325. You'll have to add more baking time, probably at least ten extra minutes or more.)

Remove and place on wire rack to cool.

Once cooled, loosen from the pan. 

Allow to continue to cool. 

Sprinkle with powdered sugar.

Serve and enjoy!

Pound cake is delicious on its own and it’s also good with ice cream. 

I actually love to butter my slices of pound cake while it’s still warm. Yum!

Store in an airtight container at room temperature. The cake will stay good for 4 - 5 days. 

You can freeze this cake to eat later. Allow to thaw naturally. 

What to Expect from this Cake

If you love a luscious pound cake you’re going to flip over this. It’s so easy and delicious, and best of all. . .it's soft and flaky! (Not as dense as a usual pound cake, for sure). I loved slicing mine up and serving it buttered while warm but pound cakes are also delicious at room temperature or even chilled. Best of all, you can make and serve this in a hurry. No more all-day-baking to get a cake as good as Grandma’s! (Shh! Don’t tell her we cheated!) 

Variations on this Recipe

I love to mix things up, so here are some suggestions to do so. 

Sour cream: If you don’t have heavy cream, no worries. Just use sour cream. It’s nice and heavy. 

Mayonnaise: You can add mayo in place of the heavy cream if you like. 

More eggs: You can add up to give eggs in this recipe. 

Vanilla pudding: Feel free to add a small box of dry instant pudding mix to the recipe.
