Easy Pecan Chewies

What is a Pecan Chewy?
For some time Iโve been following Stacey at South Your Mouth.
Youโll notice that Iโve linked you guy to many, many of his recipes over the past year.
Iโve never actually baked anything from his site until today.
Several days back he sent out an email with a recipe for Pecan chewies. Well, Iโm nuts about nuts, as Iโve shared in many previous posts. So, I couldnโt wait to make these.
I Had to Make a Few Tweaks (as Always)

Staceyโs recipe called for unsalted butter. I only had salted. His recipe also called for self-rising flour. I only had all-purpose.
Thank goodness, he clarified how to turn all purpose into self-rising by adding baking powder and salt. I also threw in a half teaspoon of baking soda.
Iโm Not Great at Following Directions
I know. Shocker. But Stacey specifically said, โUse a metal pan for crisper edges and flatter sides.โ
Did I follow his advice?
No, I did not. My metal pans are on a baking shelf in the garage and I didnโt want to have to trek out there through my soggy yard to find a pan. So, I chose a really lovely Pioneer Woman baking dish.
I buttered it, then added parchment paper.

Pecan Chewies Ingredients

You will find a full printable recipe card at the bottom of this post but hereโs a quick peek at what youโll need. These are simple ingredients you likely have on hand in your pantry or fridge.
- room temperature butter (salted or unsalted, your choice)
- granulated sugar
- light brown sugar, packed.
- large room temperature eggs
- all-purpose flour
- baking powder
- baking soda
- salt
- chopped pecans
- vanilla extract
How to Make Easy Pecan Chewies
These were incredibly simple to make!
Start by preheating your oven to 300 degrees Fahrenheit.
Butter your 9 x 13-inch baking dish.
If youโre using a metal pan, donโt add parchment paper. If youโre not using a metal pan, you can add a piece of parchment paper for easier lifting after baking.

In a large bowl (or the bowl of a stand mixer with paddle attachment) place your softened butter. Whip until light and fully.

Add eggs and both sugars, along with the vanilla extract. Mix until silky smooth.

Itโs time to add your flour, baking powder, baking soda, and salt.

Be careful not to over mix.
Add chopped pecans. Transfer the batter into prepared dish.

Pat down so that itโs level. If youโre using a glass or ceramic dish you might want to press down the edges.

Place in preheated oven and bake for 50 - 55 minutes. (Slightly less for metal pans.)
When chewies are light golden brown remove the pan from the oven and place on wire rack to cool.

Once chewies have cooled, you can cut them into squares. If you have a bench scraper, itโs great for cutting these. Otherwise, a sharp knife will do.

Store in an airtight container at room temperature. These Pecan Chewies should stay fresh 3 - 4 days. If you like, you can freeze them to eat later.
What to Expect from These Pecan Chewies

These chewies are absolutely loaded with pecan flavor.
Theyโre crisp on the bottom, edges, and top, but chewy and sticky in the center.

They hold their shape (if you wait until theyโre cooled to cut them) and easy to eat with your fingers. (Hey, Iโm lazy! I love an easy dessert like this.)
These would be great for an afternoon tea, as an evening dessert, or even for breakfast! In short, theyโre perfect.
Iโm so glad I made these delicious chewies! They are somewhat reminiscent of my BLONDIES but with a distinctly pecan flavor (and no chocolate).
Variations on this Recipe
Chocolate Chips (or chocolate chunks): These pecan chewies would be marvelous with chocolate added to the mix.
Maple Walnut: Skip the pecans and add chopped walnuts instead. Add maple extract along with vanilla. Voila! Maple Walnut Chewies!
Coconut: I think these would be amazing with both chocolate and coconut. They would be similar to my Seven Layer Bars. Yum! If you want them to taste like Almond Joy bars you could add coconut, chocolate, and chopped almonds in place of pecans.
Cookies: I havenโt tried it yet but I think this batter is more like cookie dough. So, I would consider turning these into cookies. I might press a pecan half into the top of mine.
