Can I Turn S’Mores into Truffles?

If you love the taste of S'Mores around a campfire but you're feeling fancy, have I got a treat for you! This truffle recipe will give you the flavors you love in tiny bite-sized pieces!

This was the question I asked myself earlier today. I’ve been on a roll making truffles lately. It all started with the Red Velvet Truffles I made for Valentine’s Day.

Then I followed that up with Dark Chocolate Raspberry Truffles, which I helped my friend Anita make. (Yum!)

I used that same dark chocolate recipe to create my most recent truffle masterpiece–Almond Joy Truffles.

Those turned out so well that I decided to make a new version: S’Mores.

I mean. . .c’mon. Who doesn’t love S’Mores?

What are S’Mores?

S’Mores got their start with the Girl Scouts. They would bring chocolate bars, marshmallows, and graham crackers to the cookout. Marshmallows would be heated over the campfire until oozing and golden–and then sandwiched with the chocolate between two graham crackers.

I wanted to recreate those flavors, but without the mess or the oozing.

So, I decided to make ganache and stir in dehydrated mini marshmallows (not to be confused with traditional mini marshmallows), along with crunched up graham crackers.

The result was out of this world! Best of all, no campfire necessary!

While chocolate is melting, prep your graham crackers. Break up 3/4 of a cup of graham crackers. Be careful not to completely crush graham crackers. Pieces should be bite-sized.

Remove melted chocolate from microwave and stir until smooth and creamy.

While the ganache is still loose, add your dehydrated marshmallows and graham cracker bits.

Stir well and place in refrigerator for a full hour or until chocolate ganache is scoop able. (Check out that chocolate mixture! Beautiful!)

Make Your Smores Truffles

Place a piece of wax paper on a baking sheet or something else firm and scoop out balls of ganache using a small cookie scoop. It’s fine if it’s still a little loose as long as you can get scoops.

Scrape down the sides of the bowl with a silicone spatula so you don’t leave any excess chocolate behind!

Place scooped ganache back in refrigerator for at least a half an hour or until you can handle the balls.

While they’re firming up, crush half a cup of graham crackers.

Roll the ganache balls between your palms to make them perfectly round, then roll them in crushed graham crackers.

Place on serving plate and serve while cold.

To store leftovers: place in airtight container (or cover with plastic wrap) then place in refrigerator. They will stay good for several days. If you’re not serving them for a few days they can be frozen up to two months in a freezer back (like Ziplock bag).

What to Expect from These S’Mores Truffles

These luscious bite-sized truffles are very reminiscent of an honest-to-goodness S’more, y’all!

You get the crunch of the graham crackers, the sweetness of the marshmallows, and the creamy goodness of the chocolate truffle center.

I only wish I’d come up with this idea sooner! No open flame or toasted marshmallows necessary.

I plan to serve these at an upcoming event. I can’t wait to see what my guests think! These really are the perfect treat, an amazing no bake dessert!
