Easy Caramel Banana Cake

Warm, buttery, caramelly, sweet. . .and loaded with rich banana flavor. This Easy Caramel Banana Cake is absolutely perfect all year ’round!

I’m on a kick, making cakes that start in a skillet. If you followed my Apple Spice Skillet Cake post, you know how easy it is. This yummy Caramel Banana Cake starts in a skillet but doesn’t end there. It starts out looking like bananas foster and ends up tasting like the yummiest caramel-y thing you ever put in your mouth!

Grab that skillet, y’all!

You’re gonna need it! There’s something so satisfying about watching sugar morph into caramel and that’s exactly where this story begins. You’ll have the joy of watching this transformation–from beginning to end.

But first, let’s talk about what you’ll need to make my Caramel Banana Cake. It looks complicated but it’s really one of the simplest cakes you’ll ever make! No, really. I promise!

INGREDIENTS:

Oh boy! It’s a banana/walnut extravaganza!

What you’ll need for the cake:

  • Yellow (or butter golden) cake mix
  • water
  • oil
  • eggs

What you’ll need for the banana filling:

  • sugar
  • butter
  • bananas
  • walnuts

How to make my Caramel Banana Cake:

Ooooh yum!

Warning before we begin…

There’s something incredibly satisfying about this process, y’all! I just kept staring into that skillet, watching the colors and textures change. And trust me when I say it was all I could do not to eat the caramalized bananas before stirring them into the cake mix! But, I resisted!

Here we go!

Place granulated sugar in saucepan over medium heat (stirring constantly) until it dissolves and turns a beautiful amber color.

Magic! Sugar becomes caramel, just like that!

Add the stick of butter and stir. You’ve just made caramel, y’all!

Add bananas and stir. Simmer for a couple of minutes.

Those colors!

Stir in the walnuts and set the filling aside to cool.

Oh, man. I want to eat the whole pan!!!

PREPARE THE CAKE MIX:

In a separate bowl mix together the cake mix, oil, water, and eggs. Beat until smooth.

Incorporate the banana filling.

Let’s start mixing!

Stir until well mixed.

Fully incorporate!

Place in a prepared (sprayed/floured) bundt pan and bake at 350 degree for 45-50 minutes or until golden brown (and springs to the touch).

Allow to cool, then flip out of pan.

Sprinkle with powdered sugar.

Heavens to Betsy, that looks good!

Slice and serve!

I really don’t know how to describe this cake…

…except to say that it’s got the most wonderful nutty, caramel-y taste. The caramelized bananas result in a rich, warm sensation that you just don’t get in a typical banana cake. And even though I’m on a diet, I “might have” had a slice. (Hey, don’t worry! I added up the Weight Watchers points!)

You could add to this recipe with:

  • chocolate chips
  • caramel chips

You could make this cake using other fruits. Some options might include:

  • Apples
  • Pineapple
  • Mango
  • Coconut

You could top this cake with:

  • drizzled caramel
  • drizzled chocolate
  • powdered sugar glaze
  • royal icing glaze

How to store my Caramel Banana Cake:

  • This will stay fresh unrefrigerated for 3-4 days.
  • Keep in fridge for a week.
  • Freeze (tightly wrapped) for up to 2 months. (Thaw to serve)
  • NOTE: I cut my cake in advance and individually wrapped the slices in press ‘n seal to share with friends the next day.

I just made this cake and it is phenomenal! I always use milk with a box cake mix and always add a teaspoon of vanilla. The flavor of the caramel and the bananas was soooo tasty and the cake was soooo moist! I just dusted it with powdered sugar because I didn’t think it needed added sweetness and I was right. Everyone at church loved it! Thank you so much!
