Healthy Cinnamon Apple Muffins

Rarely do you hear the word "healthy" in the same sentence as the word "muffin" but these yummy Cinnamon Apple Muffins definitely are! They're packed with oats, real apple, cinnamon, and even a banana. (Hey, basically a fruit salad with some oats thrown in!)

Let's start with the obvious: These are sugar free, (meaning no added sugars). They're great for people trying to cut back on their sugars, but they do have banana and apple in them, so factor that in. I sweeten mine with Monk Fruit, but you might choose Stevia or some other sugar substitute.

Now let's talk about the flour. These muffins contain no white flour. They're oats-based. I take 1 ¼ cups of oats and grind them in my Ninja, then use them as a flour. Oats are a terrific substitute for those who can't have white flour. Best of all, they're super nutritious. With the combination of apples and oats, you're giving your body tons of fiber and antioxidants.

This is a simple recipe that I came up with while on a diet. I needed something that was WW points friendly. This recipe was just one point on my plan, so I was a happy girl!

If you're used to a light, fluffy muffin, this one might not be for you. It's more on the chewy side. If you love textures, though? You're gonna love it!

So, let's get to it.

Let's make some healthy Cinnamon Apple Muffins, y'all!

INGREDIENTS:

Yum, y'all!
  • 1 ¼ cups quick oats (uncooked)
  • 2 eggs
  • 1 ½ cups shredded apple (fresh)
  • 1 banana (mashed)
  • 1 ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¼ cup Monk Fruit (or other sugar substitute)
  • ¼ cup chopped nuts or coconut (optional)

How to make my Healthy Cinnamon Apple Muffins:

  • Preheat oven to 350 degrees
  • Shred 1 ½ cups of fresh apple
  • Mash one banana
  • Grind 1 ¼ cups quick oats (uncooked)
  • Combine apple, oats, banana, and eggs and mix until blended.
  • Add baking soda, cinnamon, pumpkin pie spice, and Monk Fruit and stir until incorporated.
  • Stir in nuts and mix well.
Mixed and ready!
  • Line cupcake tin (makes 12 muffins)
  • Scoop batter into liners.
Just the right amount of batter! Whew!
  • Place in pre-heated oven and bake for 17-18 minutes or until golden brown.
All done!
  • Cool before serving.

Question: Are oats gluten free?

Answer: Pure oats are, but many oats are processed in plants with glutinous products.

Question: Can I freeze these muffins?

Answer: Yes, I freeze mine for up to a month or two at a time. They warm nicely in the microwave but remove liners first if your liners are metallic (as mine are).

Question: Can I substitute other spices?

Answer: Yes! You can add whatever you like, spice-wise. You might choose ginger as an option.

Question: What can I use to top these muffins?

Answer: I used half a tablespoon of peanut butter. Yum!

These muffins are loaded with oats, apples, and pecans. Best of all, no white flour and NO added sugar. They're a lovely substitute for a sugary muffin, guaranteed to please.
