This Apple Carrot Bundt Cake is the perfect fusion of warm spices, fruity sweetness, and a touch of crunch. (Okay, a little more than a touch! I really loaded this one up.)
Starting with a simple carrot cake mix, this recipe gets an irresistible upgrade with luscious apple pie filling, shredded carrots, tart craisins, and crunchy pecans.
The apple pie filling not only adds a natural sweetness (who doesn't like that?) but also keeps the cake incredibly moist, which eliminates the need for oil or butter. The end result is a beautifully textured cake with bursts of flavor in every bite—perfect for fall gatherings, holiday desserts, or an everyday treat.

Apple Carrot Cake Ingredients

- 1 (15.25 oz) box carrot cake
- 3 eggs
- 1 can apple pie filling
- ½ cup grated carrots
- ½ cup craisins
- ½ cup chopped pecans
How to Make Apple Carrot Cake
This is such a simple cake, y'all!
Start by preheating your oven to 325 degrees.
Place apple pie filling in bowl of stand mixer (or large mixing bowl). Mix using paddle attachment until they break down.

Add three eggs and mix for 3 minutes


Add cake mix and beat until combined.

Fold in carrots, craisins, and pecans.


Prep bundt pan with Baker’s Joy
Transfer batter to prepared bundt pan.

Place in preheated 325 degree oven and bake for 50 minutes or until cake springs back to the touch. A toothpick should come out clean.

Allow to cool for 15 minutes then turn out onto rack.
Sprinkle with powdered sugar or (if you like) frost the cake. I happened to have a batch of my luscious Cream Cheese Frosting on hand, so I used that.
(Note: I don't often cover a whole bundt cake in frosting, so this was fun!)

What to Expect from This Apple Carrot Cake Recipe
Every now and again I come up with a cake idea that blows me away. This was one of those. I (personally) love crunchy cakes. This one does not disappoint. The nuts, the carrots, the craisins. . .they all added texture. And those apples? Y'all, I wasn't sure how they would work in the recipe, but in the end they were the sweetness this lovely cake needed. All in all, I'd say this is a perfect cake! Top it with frosting, or sprinkle it with powdered sugar. No matter how you serve it. . .serve it! You'll be so glad you did.
