Easy Cinnamon Apple Bundt Cake

If you love the flavors of cinnamon and apple, have I got a treat for you. This simple cake starts with a box of cake mix but certainly doesn’t end there! 

Apples and Cinnamon? Yes, Please!

It’s fall, and you know what that means! Those warm, fall flavors are occupying my mind and my heart. I recently bought a big bag of fuji apples (one of my personal favorites). I knew that I wanted to make something special with a few of them but couldn’t make up my mind. 

Tonight I got the idea to make this cake and I’m so glad I did! 

I recently came up with a recipe that might sound similar. My Applesauce cake has a similar flavor profile, but it’s made with applesauce, not real apples. It’s also got a caramel component. And it’s a “from scratch” cake. 

This one? Well, let’s just say it’s a perfect fit for my “out of the box” approach to baking. Starting with a simple box of yellow cake mix, you would expect it to be ordinary. I promise, it’s anything but! 

Apple Cider Vinegar?

You’ll notice an interesting ingredient in the lineup this time around: apple cider vinegar. Why, you ask? Simple! When you add apple cider vinegar to milk, you get something akin to buttermilk. I’ve used this technique before, in my Kentucky Butter Cake and again in my Triple Chocolate Coffee Cake.

Here are a few other important benefits of using apple cider vinegar to your baked goods: 

  1. It’s a great leavening agent: When you mix apple cider vinegar with baking soda, apple cider it helps baked goods rise. How, you ask? by creating a chemical reaction that produces carbon dioxide. Poof! 
  2. Moisture: There’s nothing worse than a dry cake, but when you add apple cider vinegar it helps with the moisture component. 
  3. Tangy flavor: The subtle tang that apple cider vinegar adds is especially perfect for this particular recipe. It counter-balances the sweetness of the apples.

Cinnamon Apple Bundt Cake Ingredients

You will find a full printable recipe card at the bottom of this post. These are simple ingredients you might already have on hand in your pantry or refrigerator. 

  • 1 yellow cake mix
  • 3 large eggs
  • 1 stick butter, room temperature
  • 1 cup whole milk
  • 1 teaspoon apple cider vinegar
  • 2 cups shredded apples
  • 1 teaspoon cinnamon
  • ½ teaspoon pumpkin pie spice
  • 1 cup Powdered sugar
  • ½ teaspoon cinnamon

How to Make Cinnamon Apple Bundt Cake

This is a simple process. You’re going to love it! 

Shred apples and set aside.

Preheat oven to 325 degrees Fahrenheit. 

Prepare bundt pan with Baker’s Joy or other baking spray. 

Place cake mix into a large mixing bowl or the bowl of a stand mixer. Add milk, eggs, and apple cider vinegar. Mix well. Add butter and continue to mix.

Now add the spices and apples. Mix only until combined.

Scoop batter into the prepared bundt pan. 

Place in preheated oven and bake for 55 minutes or until it turns golden and springs back to the touch. 

Remove and place on wire rack to cool.

Turn out and cool completely. 

Make your glaze: Mix the powdered sugar, ½ teaspoon cinnamon and 2 tablespoons of water until smooth. (You might need to add more or less water to get the right consistency, about the texture of honey.)

Drizzle over the cake.

Allow to set up.

Serve and enjoy!

Store this cake in the refrigerator. It should stay good for 4-5 days. 

You can freeze this cake for later use.
