What are Overnight Oats?
If you’re a fan of oatmeal you’re going to love these sweet oats, and not just for breakfast! Overnight oats are just as the name implies: oats that are prepared the night ahead.
The basic idea is to combine rolled oats (never instant or steel cut) with liquid (usually milk or a dairy-free alternative) and other ingredients in a jar or container. Then you refrigerate the mixture overnight. The oats absorb the liquid, resulting in a soft and creamy texture without the need for cooking.
I love no bake recipes! These are soaked overnight and the following morning you serve with fruit and nuts, giving you the most delicious banana flavor! You can eat them cold (straight from the jar you stored them in) or warmed in the microwave. I’ve tasted them both ways and they’re delicious, no matter how you serve them up!
This recipe is like banana bread in a bowl. No, really!
Are Overnight Oats Customizable?
Absolutely! You can make these dozens of different ways. I just made a batch with mixed berries and they were out of this world. Traditionally, you’lll find the following in overnight oats:
Yogurt: Adds creaminess and extra protein.
- Fruits: Fresh or dried fruits can be added for sweetness and flavor.
- Sweeteners: Honey, maple syrup, agave nectar, or other sweeteners can be used to enhance the taste.
- Nuts and seeds: Chia seeds, flaxseeds, almonds, or other nuts can add crunch and additional nutrients.
- Spices: Cinnamon, nutmeg, or vanilla extract can be added for flavor.
What do I Store These Oats In?
They can be made in small mason jars or other tiny glass jars.
I found the perfect jars at amazon. I actually bought them to make homemade yogurt, but they worked perfectly for this, too.
Depending on the size of jars you use, you will end up with about 8 servings. I used eight 8-ounce jars.
Banana Overnight Oats Ingredients
You will find a full printable recipe card at the bottom of this post but here’s a look at what you’ll need to make these. These are such simple ingredients. I’m guessing you already have most of them in your fridge or pantry.
- ripe bananas
- cream cheese
- Greek yogurt
- Almond milk
- Old-fashioned rolled oats
- Maple syrup
- Maple extract
- Finely chopped walnuts
How to Make Delicious Overnight Oats
Chop walnuts and set aside.
Place your cream cheese, yogurt, maple syrup, and maple extract into a food processor or mixing bowl and process until smooth.
Add one banana to the mix and blend until smooth and creamy. (Just one. You’ll need the other one for slicing.)
Place the oats and cinnamon into a large bowl.
Pour the yogurt mixture over them.
Now pour the almond milk over that.
Stir until well combined.
Allow the oat mixture to sit for 10 – 15 minutes until the oats begin to absorb much of the liquid.
Using an ice cream scoop, fill each jar about 2/3 up with the oat mixture. You’ll want to use up all of the mixture.
Now slice that remaining banana into thin slices. Add 3-4 slices to the top of each jar.
Now sprinkle in some chopped walnuts.
Add the lids to the jar.
Refrigerate overnight.
You can eat the oats cold or warm them in the microwave in 30-second increments until fully warm.
Enjoy!
Store leftover oatmeal containers in the fridge. They should stay good for about a week.
What to Expect from this Recipe
They’re sweet, they’re creamy, they’re loaded with texture, they pack a punch of banana flavor. And those walnuts? They’re perfect!
I ate mine cold absolutely loving the experience. Then, just for fun, I headed some and ate them warm. Man oh man. Talk about delicious! There’s something about warm fruit in oatmeal that gets me every time. (In a good way, I mean.)
I highly recommend this breakfast treat—in part because it’s delicious and in part because it’s always nice to have ready-to-go breakfast dishes on hand. I love the whole grab-and-go idea, and this is perfect for that. (You could even take these to work with you.)
Best of all, these are incredibly filling. In fact, I was so full after eating them that I pushed off my lunch by a couple of hours because I was still full from breakfast! That means they’re perfect for healthy eating plans.
Variations on this Recipe
If you’re unable to have sugar, skip the maple syrup. Use monk fruit or other low-cal sweetener, instead.
Chocolate. You can always add a chocolate layer to this breakfast dish.
Raspberry: I love berries and raspberries are high on the list. You can use berries and granola in place of bananas and walnuts.
