Is it a Cheesecake or is it a Pie?

This recipe is a combination of two things - a cheesecake and a mousse. It’s served in a graham cracker pie crust and comes together in minutes!
If you have followed me for any length of time you know that I love to use whipping cream and boxed instant pudding in several of my favorite desserts. I use it in my Easy Cheesecake Mousse and I’m particularly fond of stabilizing whipped cream with pudding mix.
Today I stared at several of the ingredients I happened to have on hand in my kitchen. They included a graham cracker pie crust, some fresh strawberries, a box of strawberry cream pudding (Sonic brand) and some whipping cream that needed to be used.
I also happened to have some cream cheese left over from a wedding cake I baked over the weekend. (I use cream cheese in my Dreamy Buttercream.)
As I pondered all of those ingredients, it hit me: Why not make a summer pie (the ice box variety).
What is an Ice Box Pie?
Just as the name implies, this is a pie that you keep in the fridge. Most ice box pies are the no-bake variety, and come together very quickly.
I love a good ice box pie, not just because it’s too hot to turn on the oven in the summertime, but also because they tend to be lighter, fluffier, and still packed with fruity flavors I love.
In this case, I decided to turn my leftovers into a strawberry cheesecake pie. And boy oh boy, what a dreamy idea it turned out to be!
No Bake Strawberry Cheesecake Ingredients

You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need. These are such simple ingredients! You might already have several of them on hand in your pantry or refrigerator, even now.
- Strawberry Cream pudding mix (instant)
- heavy whipping cream
- chopped strawberries (plus more for decorating)
- room temperature cream cheese
- powdered sugar (not pictured)
- ready-made graham cracker crust
How to Make this Easy No Bake Pie
This comes together so quickly. You’re going to love the ease of this one, folks. I promise!
Chop two cups of strawberries and set aside.

Combine the box of strawberry pudding and two cups of heavy cream.

Whip until soft peaks form. You can use a regular mixing bowl with electric mixer. I used my stand mixer with whisk attachment.

Place one cup of the whipped cream mixture into a piping bag with a Wilton 1M tip (or tip of your choice).

Move the rest of the strawberry whipped cream to a separate bowl for later use.

Add room temperature cream cheese and half cup powdered sugar to the mixing bowl.

Whip until light and creamy.

Work the whipping cream into the cream cheese mixture.

Mix until well combined.

Now it’s time to add the chopped berries.

Mix lightly making sure they maintain their shape.

Scoop the pie filling into the crust.

Cover with the plastic top.

Place in refrigerator for 3 - 4 hours to chill. Place the piping bag of whipped cream in the fridge, as well.
When the pie is ready to cut, pipe swirls on top.

Use extra berries for decorating.

Slice and serve cold.

It’s really that simple!
Store in refrigerator for 2 - 3 days. I don’t recommend freezing this pie.
What to Expect from this Pie

This luscious pie is light, creamy, and loaded with texture and subtle flavor.
Like Is said above, I love a cold summery pie, and this definitely fits the bill!

More than anything, I enjoyed the ease of this pie. And, because I can never leave well enough alone, I’m already thinking of ways to change it up next time.
Variations on this Recipe
I think this would be lovely as a lemon blueberry summer pie. I would follow the same directions but substitute lemon pudding in place of strawberry and use whole blueberries, both in the pie and on top. (Yum!)
Coconut Cheesecake Pie: This would be a great combination! Use coconut pudding mix and a cup of toasted coconut in the mix. (Delicious!)
Chocolate Cheesecake Pie: Use chocolate pudding mix in place of strawberry cream. You could top your chocolate summer pie with chocolate shavings.
Banana Cheesecake Pie: I think a banana cream cheese pie would be yummy. Just use fresh bananas in place of strawberries. Or, go ahead and use strawberries along with bananas. (Hey, strawberries and bananas are great together!)
Questions People are Asking about Ice Box Pies
Can I make my graham cracker crust homemade?
Absolutely! Just use a couple cups of graham cracker crumbs, half a cup of melted butter, and a quarter cup of sugar to make your own crust. Then press into the bottom of a pie dish and prepare as usual.
Do I have to use pudding mix?
Nope! You can use whipping cream and two blocks of cream cheese, adding any berries you like for flavor.
Can I use sweetened condensed milk in place of whipping cream?
