To Pecan. . .or "Nut" to Pecan

That is the question. . .for other people, not me.

I say yes every single time. I used pecans in my Ultimate Chocolate Chip Cookies. I used pecans in my Easy Brown Sugar Pecan Cookies (with mayonnaise). I also used them in my favorites, my brown butter pecan cookies. (Yum!) And, of course, they're in my Mexican Wedding Cookies.

I used pecans in my Butter Pecan Cupcakes. And, of course many of my cakes (like my Italian cream cake) are loaded with pecans.

I purchased a jar of honey pecan butter while on an excursion to a small town in Central Texas called Salado. The little shop where I found the pecan butter (a place called The Strawberry Patch) featured all sorts of jarred items, from butters to jams to preserves to salsas.

Best of all, local musicians were playing when we arrived! So, I got the best of both worlds--yummy preserves and butters and some great music. (Check out that wall of preserves in the background!)

You'll be hearing more from me in the coming weeks about other things I bought in this great store, but for now just know that I've fallen head over heels in love with their Honey Pecan butter!

Pecan Butter? What's That?

Let's chat for a moment about Pecan Butter. You might not have this particular product handy so I took a picture of the ingredients so that I can make my own next time in my food processor. I'll get back with you after I've come up with a homemade version.

Basically, it's pecans, powdered sugar, honey, cinnamon, and a tiny bit of margarine (or butter). When I make my own version I'll definitely post the recipe. For now you can purchase yours online or at your local store.

  • ½ cup salted or unsalted butter
  • 1 cup pecan butter (I used honey pecan)
  • 1 large room temperature egg
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 ¼ cups all purpose flour
  • 1 teaspoon baking soda
  • 1 cup chopped pecans

That's it! All basic ingredients, with the exception of the pecan butter.

How to Make Easy Pecan Butter Cookies

Wondering how to make these chewy, flavorful cookies? They're so simple you're going to wish you'd stumbled across this recipe sooner! Here's how it's done:

Start by preheating your oven to 375 degrees. Make sure you've got prepared baking sheets. (I use parchment paper.)

Cream half cup butter and add pecan butter in a large mixing bowl. You can use a stand mixer with paddle attachment or simple cream with an ordinary electric mixer.

Mix until fluffy on medium-high speed.

Add vanilla and sugars and continue to mix until incorporated. Beat in your egg.

It's time to add the dry ingredients!

Combine baking soda and flour and slowly work into your wet ingredients. Be careful not to over mix.

Stir in pecans. (Note: you could toast pecans before adding if you like but I opted not to.)

Scoop into balls and place on parchment paper lined cookie sheet.

Refrigerate for 10 minutes. Flatten balls of dough with your palm.

Bake at 375 degrees for 10 minutes or until golden brown.

Remove from oven and place baked cookies on wire cooling rack to cool. Enjoy these chewy cookies with a big glass of milk. (They have a rich flavor you're going to love!)

Store leftovers in an airtight container. If you have dough left over you can store cookie dough balls in the freezer in a ziplock bag.

What to Expect from These Pecan Butter Cookies

I honestly don't know what to say about these except, "Wow!" I expected something with the flavor of a pecan Sandie but the richness of a peanut butter cookie. They did not disappoint.

These are chewy and crisp and loaded with nutty goodness, a warm, toasty flavor. They remind me of butter pecan ice cream, only warm and toffee-like.

Funny note: They came out of the oven looking fluffy but settled down into themselves, forming a chewy, almost sticky cookie that surprised and delighted me! It's rich with pecan flavor.

This is one of those cookie recipes you're going to reach for again and again! (I think these would be great for a cookie exchange.)

Variations on this Recipe

You can use any other nut butter in place of pecan butter in these chewy pecan butter cookies. Here are some to try:

  • Cashew butter (add chopped cashews)
  • Almond butter (add slivered almonds)
  • Peanut butter (add chopped peanuts or chocolate chips)
  • Hazelnut butter (with cocoa powder or cacao)
  • Sunflower seed butter

Other variations on this recipe might include:

  • Cinnamon. You can always add more to the recipe if there's not enough in your pecan butter.
  • Toffee bits. I'm thinking they would pair beautifully with this recipe, along with the chopped pecans. (Or instead of the chopped pecans, if you prefer.)
  • Browned butter in place of regular butter. Yum. This idea is making me a little swoony.
  • Chocolate chips. I think this honey pecan butter would be a terrific base for a chocolate chip/pecan cookie. (Told you I love nuts in my chocolate chip cookies!)

I decided to break a cookie in half and add more of my Honey Pecan butter as a filling. Yum! Talk about a delicious treat!
