Snickers Cookie Dough Brownies

What happens when you combine refrigerated Snickers cookie dough with a boxed brownie mix? You end up with the richest, fudgiest, chewiest brownies imaginable! These easy brookie bars have gooey chocolate centers, crispy edges, and little surprises of peanuts tucked inside. And the best part? They're ridiculously easy to make!

I'll just come right out and say it: These might be the best brownies I've ever made in my life. And considering how many brownies I've baked over the years, that's saying something!

The Brownies I Didn't Know I Needed

Snickers Cookie Dough Brownies

Every now and then, I stumble across an idea on Pinterest that gets my creative wheels turning. This time, it was a recipe where someone pressed refrigerated cookie dough into a Bundt pan and poured brownie batter over the top.

Interesting, right?

But you know me. I can't leave well enough alone.

I happened to have a package of refrigerated Snickers cookie dough in my refrigerator and a box of brownie mix in the pantry. And I started wondering what would happen if I combined the two in a rectangular baking dish instead.

I figured I'd end up with something resembling a brookie, that delicious combination of a brownie and a chocolate chip cookie.

What I didn't expect was to create one of my favorite desserts of all time.

And I'm not exaggerating.

In fact, I packaged these brownies up to give to my grandchildren, then proceeded to break into the package. Twice.

Apparently, I cannot be trusted around these brownies.

They need to leave my house immediately.

What Makes These Snickers Brownies So Special?

Snickers Cookie Dough Brownies

It's all about the textures! The brownie portion bakes up beautifully, with that delicate, crackly top everyone loves. The center stays wonderfully fudgy, while the edges develop a slightly crunchy, chewy texture.

But then there's the cookie dough! The Snickers cookie dough adds a buttery, golden layer that winds its way through the chocolate. And just when you think you're enjoying an ordinary brownie, you encounter one of those little peanut pieces.

Oh, my goodness. That tiny bit of crunch and peanut flavor takes the whole thing over the top.

The amazing part is that I didn't add anything else. No frosting, no caramel drizzle, no peanut butter swirl. I considered all of those things, believe me. But I'm so glad I resisted. These brownies don't need a thing.

Ingredients for Snickers Cookie Dough Brownies

Snickers Cookie Dough Brownies

You won't believe how simple the shopping list is! We're starting with two convenient store-bought products and transforming them into something extraordinary.

  • Refrigerated Snickers cookie dough:Β This creates the buttery cookie portion, complete with chocolate, caramel flavor, and little pieces of peanuts.
  • Boxed brownie mix:Β Use your favorite mix, prepared with the eggs, oil, and water called for on the package.

That's it! Two main ingredients, plus whatever your brownie mix requires. No complicated measurements. No creaming butter and sugar. No hauling out the stand mixer. Just good old-fashioned shortcut baking!

How to Make Snickers Cookie Dough Brownies

Step 1: Prepare Your Pan

Preheat your oven to 350Β°F, or the temperature appropriate for your brownie mix and baking pan.

Prepare your rectangular baking dish with parchment paper or nonstick baking spray.

Step 2: Press in the Cookie Dough

Open your package of refrigerated Snickers cookie dough and arrange the individual pieces across the bottom of the prepared pan.

Using clean hands or your fingertips, gently press the pieces together to create an even layer.

Try to fill in any gaps.

Step 3: Give the Cookie Dough a Head Start

Place the pan in the preheated oven and bake for 8 minutes.

Now, here's something important: The cookie dough won't look baked at this point.

Mine was barely softened!

That's exactly what happened during my experiment, and it worked beautifully.

Step 4: Prepare the Brownie Batter

While the cookie dough is in the oven, prepare your boxed brownie mix according to the package directions.

Use the recommended eggs, oil, and water, stirring until combined.

Step 5: Combine the Two

Remove the softened cookie dough from the oven.

Carefully pour the prepared brownie batter over the cookie dough, spreading it as evenly as possible.

Here's where my experiment took an unexpected turn.

I discovered that my brownie batter barely covered the cookie dough. In fact, the two layers were almost equal in thickness!

As I spread the brownie batter, some of the softened cookie dough started coming up into the chocolate.

Rather than fighting it, I decided to work with it.

Step 6: Give It a Gentle Zigzag

Using my small offset spatula, I made a light zigzag motion through the two mixtures.

Nothing dramatic. Just a gentle movement to encourage the cookie dough and brownie batter to mingle.

I wasn't even sure whether the cookie dough would show through on top.

And you know what?

I didn't care!

I knew the flavors would be there, and that's what mattered.

Step 7: Bake Until Set

Return the pan to the oven and bake until the brownies are set around the edges and the center is no longer liquid.

Begin checking after 20 minutes, but expect additional baking time depending on your pan size and brownie mix.

A toothpick inserted into a brownie-heavy section should come out with moist crumbs rather than raw batter.

Remember that these brownies are supposed to be fudgy!

Step 8: Cool and Slice

Allow the brownies to cool completely before cutting them into squares. This helps the chocolate layer firm up and makes slicing much easier.

And then? Prepare to fall in love.

What I Loved Most About These Brownies

Where do I even begin?

First, there's the convenience. I'm a huge fan of taking ordinary boxed mixes and refrigerated doughs and turning them into something special. That's practically the entire philosophy behind Out of the Box Baking!

But what surprised me most was how beautifully these two products worked together.

Some of the brownies had more cookie dough showing. Others were almost entirely chocolate. A few had a gorgeous marbled appearance. Every square was a little different.

The center pieces were rich, soft, and gooey. The edge pieces had that wonderful crunch that some brownie lovers specifically look for.

And those peanuts!

I'd almost forgotten that the Snickers cookie dough contained little pieces of peanuts. They were such a delightful surprise.

Honestly, I wouldn't change a thing.

Tips for Perfect Cookie Dough Brownies

Don't overbake the cookie dough during the first step. Eight minutes was enough to soften mine and give it a head start without fully baking it.

Don't worry about perfect layers. If the cookie dough comes up into the brownie batter as you spread it, that's perfectly fine. In fact, that's what made my brownies so interesting.

Keep the swirling gentle. A small offset spatula works beautifully. You don't want to completely blend the two mixtures.

Resist the temptation to add more toppings. These are already wonderfully rich and flavorful.

Let them cool before slicing. The brownie centers need time to firm up, especially if you love that fudgy texture.

Fun Variations to Try

Snickers Cookie Dough Brownies

While I wouldn't change a thing about this particular combination, the technique opens the door to all sorts of possibilities.

You could try chocolate chip cookie dough with a traditional brownie mix, peanut butter cookie dough with chocolate brownies, or even sugar cookie dough paired with a blondie mix.

The possibilities are practically endless!

But if you can find the Snickers cookie dough, I highly recommend starting there. Those little peanut pieces really make a difference.

Frequently Asked Questions

Snickers Cookie Dough Brownies

What is a brookie?

A brookie is a dessert that combines a brownie and a cookie. Some brookies have distinct layers, while others have cookie dough swirled into brownie batter. These Snickers Cookie Dough Brownies fall somewhere in between!

Do I need to bake the cookie dough before adding the brownie batter?

For this recipe, I gave the cookie dough an 8-minute head start. It softened without fully baking, making it easy to gently combine with the brownie batter.

Can I use homemade brownie batter?

Absolutely! Your favorite homemade brownie recipe should work, though you'll need to adjust the baking time according to the amount of batter and pan size.

Can I use regular chocolate chip cookie dough?

Yes! You won't get those little Snickers-inspired peanut surprises, but the combination of chocolate chip cookies and brownies should still be delicious.

How do I know when the brownies are done?

Look for set edges, a crackly top, and a center that no longer looks liquid. A toothpick should have moist crumbs rather than raw batter. Remember that melted chocolate and caramel pieces can make the toothpick look sticky.

How should I store these brownies?

Keep cooled brownies in an airtight container at room temperature for approximately 3–4 days. You can refrigerate them for longer storage, although refrigeration may make them firmer.

Can I freeze Snickers Cookie Dough Brownies?

Yes! Once completely cooled, wrap individual brownies tightly and place them in a freezer-safe container or bag. Freeze for up to 2–3 months for best quality. Thaw before serving.
