Where the Idea Came From
If you've been following me for a while, you know that I love scones. (I'll leave you with a list of my favorites at the end of this post.) But this time I happened to have some self-rising flour on hand and decided to use it instead of all-purpose.
The result? The easiest scone I've ever made! And I'm sure you'll think so, too, once you're tried your hand at this recipe.
Note: If you don't happen to have self-rising flour on hand make your own. To two cups of all purpose flour, add 3 teaspoons baking powder and ½ teaspoon salt. That's it! Easy-breezy!

Scone Ingredients

- 2 cups self-rising flour
- 1 cup heavy cream (plus 1–2 tablespoons for brushing)
- ½ to ¾ cup pie filling of choice (cherry, apple, blueberry, etc.)
Note: These scones aren't terribly sweet, so feel free to add a quarter cup of sugar to the mix, if you like things sweeter.
How to Make Three-Ingredient Scones
Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a large bowl, mix self-rising flour and heavy cream until just combined.
Gently fold in the pie filling. Don’t overmix — streaks of fruit are perfect.

Turn the dough out onto a lightly floured surface. Pat down to about 1 inch thick.

Cut into 8 wedges or use a biscuit cutter for rounds.

Place on prepared baking sheet.

Bake 15–18 minutes, or until golden brown on top.

Optional: Brush with cream and sprinkle with sugar before baking for a glossy finish.
