I recently discovered Oreo Cakesters. I’ve been intrigued by them and decided I needed to make some, myself. I found several recipes online and prepped myself to bake up a batch. That’s when I discovered (gasp!) I’m out of chocolate cake mix.
I know, I know. . .I could make them from scratch. But I love the ease of a cake mix cookie. So, I’ve decided to push the chocolate version off to a later today. Tonight I worked with what I had on hand. . .lemon.
Lemon Cakesters are Delicious!
I love tart lemon cookies. I recently posted a Lemon Crinkle Cookie recipe that’s similar. And I’m also a huge fan of my Lemon Shortbread Cookies. I’ve even got a Crumbl Lemon Blackberry cookie recipe that’s over-the-top delicious!
So, I knew I would love Lemon Cakesters. . .and I was right! These are sheer perfection, and so easy to make!
Without further ado, let’s look at what you’ll need to make these cookies:
Lemon Cakester Ingredients
These are simple ingredients you might already have on hand.
- 1 box lemon cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1 stick butter
- 2 cups powdered sugar
That’s it! Just a few simple ingredients.
How to Make Lemon Cakesters
These come together in no time at all!
Preheat oven to 350 degrees Fahrenheit.
În a large mixing bowl or the bowl of a stand mixer combine cake mix, eggs, and oil. Mix well.
Using a small scoop, roll out small balls, (no larger than 1”)
Use your palms to smooth them out.
Place on parchment lined baking sheet and gently press down with your palm.
Place in preheated oven and bake for 11 -12 minutes.
Remove and allow to cool.
Make the buttercream filling.
Cream butter until light and fluffy.
Add powdered sugar.
If you need to thin it down a little you can use a dash of water or milk.
Place frosting in a piping bag.
Place half of the cookies upside-down and pipe a generous dollop of frosting.
Add the other cookie on top.
Serve and enjoy!
These can be stored at room temperature. They should stay good for 3-4 days.
If you like, you can use a variety of cake mixes. If you’re not a fan of lemon, use chocolate, carrot cake, red velvet, or any other flavor you enjoy. Likewise, you can vary your buttercream by making it lemon, chocolate, strawberry, or any flavor you happen to like.
