Baking with Rice Krispies
I’ve been at it for some time, coming up with recipes to use of Rice Krispies. This is another simple one, which is why I’m including it in my Short and Sweet category. It’s not exactly a Rice Krispie Treat. It’s not exactly like a baked cookie. Neither is is a candy. Instead, it’s the perfect mix of all three!
Peanut Butter Rice Krispies Ingredients
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 teaspoon pure vanilla extract
- 1 cup smooth peanut butter
- 1 1/2 cups Rice Krispie cereal
- 1 1/2 cups finely chopped dry roasted pecans
- coarse sea salt
How to Make Peanut Butter Rice Krispies
This comes together quickly and easily.
Place waxed paper on a cookie sheet and spray with nonstick spray (or melted butter).
Put sugar and corn syrup in a medium heavy saucepan.
Bring to a low simmer for a couple minutes until the sugar dissolves.
Remove from heat. Stir in the peanut butter and vanilla extract. Stir well.
Stir in cereal and chopped peanuts until well incorporated.
Scoop by spoonful onto prepared cookie sheet.
Lightly sprinkle with sea salt.
Allow to sit for an hour or so before eating. They need to firm up.
Serve and enjoy.
Store in an airtight container. They should stay good for 3 – 4 days. I don’t recommend freezing these.
These delicious treats are great any time of day. Serve them to your guests or your family. Everyone will love them!
Note: Don’t overload your cookies with add-ins (peanuts and cereal) or the cookies will be too dry. You don’t want any more than three cups total of the add-ins.
