I’ve been waiting (rather impatiently, I might add) for a batch of bananas to ripen so that I could use them for this recipe. In spite of the fact that today is Easter, a day I promised myself I would rest, I found my bananas to be the the most perfect speckled state, which meant I had to forge ahead.
I wasn’t really worried about it, because I knew this recipe would be simple. Like so many of my recipes over the past week or two (like my Bisquick Cinnamon Rolls and my Bisquick Breakfast Casserole), this one started with Bisquick.
What is Bisquick?
Bisquick is a pre-mixed baking mix that it perfect for biscuits, pancakes, waffles, and a variety of other treats you’ve probably eaten over the years.
From the time I was a kid, I’ve been familiar with that bright yellow box. My mom used Bisquick for everything, including the delicious drop biscuits she would put on top of her delicious chicken pot pie.
I bought this box so that I could bake for a ministry event but found myself with over half a box left over. That’s when I went on the prowl across the web for other sweet treats I could make using Bisquick.
I found Bisquick Banana Muffins on dozens of sites but settled on a simple recipe at bykelseysmith.com. It required just a handful of ingredients, which was nice.
I’ll tell you more about the outcome later but let’s look at what you’ll need to make these.
I would like to go ahead and add that I have a DIY Copycat Bisquick Mix recipe on this site if you don’t happen to have the store-bought version on hand.
Bisquick Banana Muffin Ingredients
You will find a full printable recipe card at the bottom of this post but here’s a quick peek at what you’ll need. These are simple ingredients.
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil or melted butter
- 2 whole eggs (large eggs)
- 3 overripe bananas, mashed
- 1 teaspoon vanilla extract
- 2 cups Bisquick
- 1 teaspoon baking soda (not pictured)
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
How to Make Bisquick Banana Muffins
These came together so easily!
Preheat your oven to 375 degrees Fahrenheit.
Prepare 12-cup muffin tin with non-stick spray for liners. I opted to use liners.
Mash the bananas in a large mixing bowl or the bowl of a stand mixer with paddle attachment.
Add vanilla, sugar, eggs, and oil to the mashed bananas.
Mix well. You will have a wet batter.
Add dry ingredients (Bisquick, banking soda, salt, and cinnamon) to the wet ingredients.
Mix only until muffin batter comes together.
Use an ice cream scoop to fill the muffin cups to the 3/4 point.
Place muffing pan in preheated oven and bake for 18 – 20 minutes or until golden brown.
Remove and place on a wire cooling rack.
Serve and enjoy!
These are great for a crowd but if you do have any leftovers they can be stored at room temperature in an airtight container or tightly covered in plastic wrap. You can refrigerate these, but if you plan to warm them up in the microwave you’ll want to remove the liner if yours are foil like mine. They can be frozen in a freezer bag up to two months.

What to Expect from these Simple Banana Bisquick Muffins
First of all, wow! These were so simple to make. I love it when an easy recipe comes together. I have to admit that I accidentally left the baking soda out but I wasn’t terribly worried about it because the Bisquick has leavening in it. (Whew!)
These baked up beautifully! I wasn’t sure if they would be biscuity, but when I opened the oven door to check on them at the 18-minute mark they looked like gorgeous banana muffins!
Waiting for them to cool was the hard part! But once I took that first bite, I knew we had a winner. These are absolutely delicious and have a lovely texture, just perfect. I have a tendency to buy bananas and forget to eat them, so this will be a terrific stand-by recipe for those times. (Win!) There’s a terrific banana flavor and a light fluffy texture.
These will give you a great way to start your day, (a delicious breakfast dish!) but they’re sweet and tasty enough to serve as a dessert or an afternoon snack. You’re going to love these yummy treats!
Variations on this Recipe
There are so many ways to change up these easy banana muffins. Here are some of my favorite things to try next time.
Brown sugar: Deepen the flavor of these muffins by substituting brown sugar for the granulated.
Walnuts or Pecans: I almost always put nuts in my banana muffins. In fact, this might be the first time I’ve omitted them. But I happened to be out of both walnuts and pecans, (something that never happens in my kitchen)! Add a full cup of chopped nuts to your batch if you like.
Mini chocolate chips: When I made my Banana bread loaf a couple of weeks back I added a full cup of miniature chocolate chips. Just be sure to dust them with flour beforehand so they don’t sink to the bottom.
Coconut: I love coconut in everything. In fact, I’ve dedicated a whole post to coconut-themed desserts. If you like, you can add a cup of coconut flakes to this recipe.
Sour cream: You can add sour cream to this muffin batter if you like. It will add extra tang. Yum!
Reduced-Fat Bisquick: Feel free to save a few calories by using the reduced fat version.
