What is a Crisp?
Traditionally, a fruit crisp is made up of two main components: fruit of some sort (in this case, blueberries) and a streusel-like topping.
I love using this method. This blog has many variations of a fruity streusel. What sets this one apart is its simplicity.
This is not a bar (like my Cherry Pie Bars) that can be cut and served by the slice. And unlike my OId-Fashioned Cobbler, it doesn’t involve a pie crust.
This is truly the simplest fruit dessert you can make and it only takes minutes to mix it up.
I was so tickled when I stumbled across this recipe because I was looking for one more dish to take to a ministry event and this was just the ticket! (And also because I love anything with streusel on top.)
What is Streusel?
This recipe calls for a streusel topping. You might be wondering what that is? A typical streusel is comprised of oats, flour, butter, and nuts.
Not everyone adds the nuts but I’m crazy about them, so I tossed in quite a few. You can skip them if you like.
What makes a streusel so perfect is that you don’t have to “work” it (like a pie crust). It doesn’t require rolling. You simply mix it up and spread it on top of whatever you’re baking and it does all of the work itself.
That streusel topping is perfect because it adds a crunch to the luscious warm fruit underneath.
Blueberry Crisp Ingredients
You will find a printable recipe card at the bottom of this post but here’s a Quick Look at what you’re going to need. These are simple ingredients you can pick up at any grocery store.
- blueberry pie filling
- quick oats (uncooked)
- light brown sugar
- all-purpose flour
- chopped pecans (or processed in your food processor)
- melted butter
That’s it! Just a handful of ingredients for this great recipe!
How to Make this Delicious Blueberry Crisp Recipe
This is so incredibly simple, y’all!
Start by preheating your oven to 350 degrees Fahrenheit.
Spray a 9×13-inch casserole dish with nonstick spray. Dump the two cans of berries into the bottom of the baking dish.
Make your streusel:
In a large bowl, mix together brown sugar, flour, pecans, and melted butter.
You can use a fork or a pastry cutter (pastry blender) to mix up the streusel.
Note: Some people prefer to use cold butter in their streusel. That’s up to you. I haven’t found that it makes much difference to use melted and it’s much easier to mix.
Spread the streusel on top of the berries.
Place (uncovered) into preheated 350 degree oven and bake for one full hour or until that crumble topping is golden brown and bubbly.
Remove and place on a wire rack to cool for several minutes.
Serve and enjoy!
If you like, you can add a scoop of vanilla ice cream on top. Another option is whipped cream.
Store crisp in the refrigerator in an airtight container or covered in plastic wrap. It should stay good for 3-4 days. I do not recommend freezing this dessert.
What to Expect from this Dessert
If you like cobbler, you’re going to love this delicious dessert with its amazing crisp topping and scoop of ice cream on top.
Those warm blueberries are absolutely amazing. (Is there anything better than warm fruit?)
But, y’all. . .that streusel topping. . .it’s just out of this world. This is a slightly different recipe from my usual streusel and it’s perfect for topping the berries.
The streusel adds the “crisp” element, which is just perfect! As I said earlier, this would be great for dessert, but it’s also delicious for breakfast. I served it at an outreach in a local park and the guests ate it up. Literally!
Variations on this Recipe
Wondering how you can mix this easy dessert up a bit? Simple!
Fresh blueberries: If it’s blueberry season and you’ve got an over-abundance of fresh berries, you can use them. However, I recommend cooking fresh blueberries down first with a bit of sugar and corn starch so that they’re more of a pie filling consistency. Otherwise those juicy blueberries might break down too much and make the streusel soggy. Note: frozen berries can be used, but you’ll need to thaw them first and then follow these same instructions.
Peaches: You can skip the berries and use canned peaches. I would probably leave off most of the juice. Canned peach pie filling would be another great option.
Cherry Pie filling. I think Cherry Crisp would be amazing!
Apple Pie filling: Yum. That’s all. . .just. . .yum. Apple crisp is a personal favorite!
Blackberry Pie filling: This is my personal favorite. I usually serve my Blackberry Cobbler with a pie crust but I think streusel would be amazing, as well!
Lemon zest: Lemon-blueberry? Yes, please! Add the zest and juice of a lemon to the berry mixture to amp up the fruity flavors!
Almond meal: If you prefer, you can add almond meal to your streusel topping.
