Ingredients

You will find a full printable recipe card at the bottom of this post but here's a peek at what you're going to need to make these delicious brownie bites. These are simple ingredients, since this recipe starts with a box of cake mix.
For the Brownie Bites
- 1 box Devil's food or dark chocolate/fudge cake mix
- 2 large eggs, room temperature
- ½ cup butter, softened/beaten
- 1 - 2 tablespoons water
- ⅔ cup chocolate chips
- 1 teaspoon vanilla extract

- 1 ¼ cups semi-sweet chocolate chips
- ⅓ cup heavy whipping cream

How to Make Brownie Bites with Chocolate Truffle Filling
Preheat oven to 350 degrees Fahrenheit.
Generously spray a mini muffin pan with baking spray.

Cream room temperature butter until light and fluffy.
Add vanilla, cake mix, eggs, and water. Beat until combined. Add chocolate chips.
The batter will be thicker than a typical cake batter, but thinner than cookie dough. It should still be soft enough to scoop.

Using a small cookie scoop, fill mini muffin wells about two-thirds full.

Bake for 10 to 11 minutes. The top should appear baked but the inside might still have a bit of a jiggle. That's what you want.

As soon as the brownie bites come out of the oven, allow them to cool for about three minutes. You might notice that they start to settle in the centers a bit. That's totally fine.

Use the handle of a wooden spoon, tart tamper, or similar tool to gently press down the center of each brownie bite to create a well. (I used a small fondant roller, which is the perfect size.)


Repeat this process on all brownies.

Allow the brownie bites to cool completely in the pan.
Run a thin knife around the edges if necessary before removing.
Make the Truffle Filling
Place chocolate chips in a microwave-safe bowl. Heat heavy cream until hot but not boiling.
Pour over chocolate chips and allow the mixture to sit for several minutes.
Stir until smooth and glossy.

Allow the filling to cool slightly until thick enough to pipe.
Transfer to a piping bag and fill each brownie bite.
