How to Make Elegant Almond Shortbread Cookie Cups

These little cookie cups may look fancy, but they're actually very easy to make. The key is working with small amounts of dough and resisting the urge to make them too big.

Make the Dough

Preheat your oven to 350 degrees Fahrenheit and spray a 24-cup mini muffin pan with baking spray.

In a large mixing bowl, cream together the butter, shortening, and sugar until light and fluffy.

Add the eggs, vanilla extract, and almond extract, mixing until well combined.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing just until a soft dough forms. Be careful not to overmix.

Using a small cookie scoop or spoon, divide the dough evenly among the 24 muffin cups.

At first, you'll probably think there's no way you'll have enough dough. Don't worry—you will! These cookie cups are intentionally petite. Use your fingers to press each piece of dough into the bottom.

Keeping the dough thin is what gives these cookie cups their delicate, flaky texture after baking.

Bake

Bake for 12 to 14 minutes, or until the edges are just beginning to turn golden.

As soon as the pan comes out of the oven, use the handle of a wooden spoon, a tart tamper, or another small round object to gently press the centers down, creating a deeper well for the filling.

Allow the cookie cups to cool in the pan for about five minutes before transferring them to a wire rack to cool completely.

Prepare the Marshmallow Filling

While the cookie cups cool, prepare the marshmallow frosting.

Beat the butter and shortening until smooth and creamy. Add the marshmallow fluff and vanilla extract and continue mixing until combined. Gradually beat in the powdered sugar until the frosting is light, fluffy, and easy to pipe.

If you're using homemade marshmallow fluff, you'll notice the frosting becomes incredibly soft and airy. It's one of my favorite things about this recipe!

Fill the Cookie Cups

Transfer the frosting to a piping bag fitted with a large star tip, or simply spoon it into the cooled cookie cups.

You don't need a lot of frosting—just enough to create a pretty swirl.

Make the Almond Glaze

In a small bowl, whisk together the powdered sugar, almond extract, and just enough water to make a smooth glaze.

Drizzle the glaze over each frosted cookie cup.
