Cherry Cheesecake in Parfait Form? Yes, Please!
If you’ve got a sweet tooth but don’t feel like turning on the oven, you’re going to love these Mini Cherry Cheesecake Parfaits. They're simple. . .and oh, so delicious!
Made with a simple cream cheese mixture, crunchy graham cracker crumbs, and luscious cherry pie filling, this no-bake treat comes together in minutes. (And trust me, I'm always in a hurry, which is why this recipe worked for me.)
Best of all, you can assemble them in small yogurt containers, mason jars, or dessert cups for the cutest individual servings. Perfect for parties, potlucks, or a cozy night in! And they're terrific when you just want "a little something" instead of a huge dessert.
I happened to have leftover pie filling after making my 3-ingredient scones, so I whipped up a batch of these in a hurry! Yours will come together quickly, too!
Ingredients for these Delicious Parfaits
These are such simple ingredients! And they're versatile. You can choose any flavors of pie filling that you enjoy. In fact, you could even use fresh fruit--berries, peaches, or even fresh cherries!.
- 1 can cherry pie filling
- 8 ounces cream cheese, softened
- ½ cup sweetened condensed milk
- 1 teaspoon lemon juice (not pictured)
- 4-5 graham crackers, crushed
- Whipped cream, for topping
How to Make Simple No-Bake Parfaits in a Hurry
Make the cheesecake filling:

In a medium bowl or stand mixer, beat softened cream cheese until smooth and creamy. Add sweetened condensed milk and lemon juice.

Continue mixing until fully combined and silky.
Prepare the crumb layer:
Crush graham crackers into crumbs. (A zip-top bag and rolling pin make this easy!)

Assemble the parfaits:
- Spoon a small amount of graham crumbs into the bottom of each container.
- Add a layer of the cheesecake filling.
- Spoon cherry pie filling over the top.
- Repeat layers if your containers are tall enough.
- Finish with a dollop of whipped cream and a sprinkle of crumbs.

Chill and serve:
Refrigerate at least 30 minutes before serving. These parfaits taste even better after the flavors meld together!

What to Expect
Each bite of these mini parfaits offers the perfect combination of creamy, crunchy, and fruity. The lemon brightens the rich cheesecake base, while the sweet cherries add a touch of nostalgia reminiscent of classic diner-style cheesecake — only much easier!
Variations
- Blueberry Bliss: Swap cherry filling for blueberry pie filling.
- Peachy Delight: Use peach pie filling and a pinch of cinnamon.
- Chocolate Lovers: Add a drizzle of chocolate syrup before topping with whipped cream.
How to Store
Refrigerate leftovers in covered containers for up to 3 days. These parfaits don’t freeze well, so enjoy them fresh and chilled.
