I can't tell you how many decisions have been made in my kitchen based on speckled bananas. (I almost made a Facebook post a couple of days back saying that very thing.) Every time I buy them, I know it will eventually come to this--bake with them or toss them out.
And every single time I think of a new recipe to bake with them.
That, my friends, is the challenge. And I am always up for a challenge, especially where bananas are concerned.

I took my tried-and-true Cranberry Banana Bread recipe (a reader favorite!) and gave it a summer spin with fresh raspberries, blueberries, and blackberries. The result? A moist, fruit-filled coffee cake with a caramelized brown sugar streusel on top—sweet, tangy, and totally irresistible.

Triple Berry Banana Bread Ingredients

For the Cake

- 3 large ripe bananas
- ¾ cup mayonnaise (up to 1 cup if bananas are small)
- 1 egg
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 2 teaspoon baking powder
- ½ teaspoon salt
- 1½ cups mixed berries (raspberries, blueberries, blackberries — toss in 1 tablespoon flour)
- ½ cup chopped pecans or walnuts (optional)
For the Streusel

- ½ cup brown sugar
- ½ cup all-purpose flour
- ½ teaspoon cinnamon
- 4 tablespoon cold butter, cut into small cubes
- Optional: ½ cup finely chopped nuts or 2 tablespoon oats for texture
Optional Glaze
- ½ cup powdered sugar
- 1–2 teaspoon milk
- ¼ teaspoon vanilla or almond extract
How to Make Triple Berry Banana Coffee Cake
This comes together so easily! (And it's a flexible recipe, for sure!)
Preheat your oven to 350°F (177°C).
Prepare a tube pan (10-inch) by greasing thoroughly with Baker’s Joy or butter/flour, making sure to coat the center tube.
Mash the bananas in a large mixing bowl.

Add mayonnaise, egg, sugar, and vanilla extract. Mix until well combined but slightly chunky.


In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold dry ingredients into wet mixture until combined.

Gently fold in the floured berries and nuts (if using).

Prepare the streusel: Combine brown sugar, flour, and cinnamon. Cut in cold butter until crumbly.

Pour batter into the prepared pan and sprinkle the streusel on top.


Bake for 50–60 minutes, until a toothpick inserted near the center comes out clean.

Cool in the pan for 15–20 minutes before loosening edges. You can serve directly from the pan or invert carefully onto a plate.


Drizzle with glaze once cooled, if desired.

Store covered at room temperature for up to 2 days, or refrigerate for up to 5 days. This coffee cake also freezes beautifully—wrap tightly and freeze for up to 2 months. Thaw overnight before serving.

I love my Berry Banana Bread recipe, so I had a feeling I would find this coffee cake version yummy. . .and I was right! It's absolutely packed full of flavor. The sweetness of the berries, the creamy richness of the cake, and that crunch streusel topping? It all came together into one magnificent cake. - It’s brunch-perfect. This bake looks as lovely as it tastes, ideal for showers, church gatherings, or lazy weekend mornings. I would suggest baking it in a 9x13-inch pan if you're planning to share. It will be easier to cut into smaller squares to spread for a crowd.
- It’s easy to adapt. Use frozen berries, swap in other fruits, or drizzle with glaze for extra sweetness. (I love this aspect of banana bread. You can add all sorts of things to the base recipe.)
- It stores and freezes well. Make it ahead, wrap it tight, and enjoy a slice whenever you crave something special.
Tips & Variations
It's great, just like it is, but there are always ways to change things up, folks. Here are some suggestions that come to mind:
- Use frozen berries if fresh aren’t in season (no need to thaw first).
- Looking for a holiday version? Skip the berried and add a combination of fresh cranberries (chopped) with walnuts or pecans.
- Swap the berries for diced peaches or cherries for a summer twist. (Cherry would be great during the holidays, especially if you threw in a few mini chocolate chips!)
- For extra crunch, add chopped pecans to both the batter and streusel.
- Want a lighter version? Substitute half the mayonnaise with Greek yogurt.
- Serve warm with a dollop of whipped cream (or sprinkle on some powdered sugar in place of the glaze)
