How to Make Pumpkin Spice Cinnamon Rolls
These are "from scratch" cinnamon rolls so you might assume they're laborious. They're not, I promise! (Trust me, I don't have time for "laborious" in my life!) They come together very easily, so even a novice can make them.
Activate the Yeast:
In a small bowl, combine warm milk and yeast. Let it rest for 5–10 minutes until foamy.

Make the Dough:
In a large bowl or mixer, combine the egg yolk, sugar, salt, powdered milk, and yeast mixture. Gradually add 2 cups of the bread flour, mixing until a soft dough forms. Add more flour as needed (up to ½ cup) until the dough is smooth and elastic.

First Rise:
Place the dough in a greased bowl, cover, and let rise for about 1 hour, or until doubled in size.

Prepare the Filling:
In a small bowl, combine brown sugar, cinnamon, pumpkin pie spice, and softened butter. Stir in pumpkin puree until creamy. Fold in pecans, if desired.
Shape the Rolls:
Roll the dough into a large rectangle (about 12x18 inches).

Spread the pumpkin filling evenly over the dough, leaving a 1-inch border.

Sprinkle with nuts, if you're using them.

Roll tightly into a log, using the waxed paper as a guide.

Slice into 12 rolls.

Second Rise:
Arrange the rolls in a greased 9x13-inch pan, cover, and let rise for 30–45 minutes until puffy.

Bake:
Preheat oven to 350°F (175°C). Bake for 22–25 minutes, or until golden brown and cooked through.

Make the Frosting:
In a medium bowl, beat cream cheese until smooth. Add powdered sugar gradually, followed by whipping cream, vanilla, cinnamon, and pumpkin pie spice. Blend until smooth and creamy.
Finish:
Spread frosting generously over warm rolls.

Add pecans, if you like.

Serve immediately.

What to Expect from these Cinnamon Rolls
These Pumpkin Spice Cinnamon Rolls are the definition of cozy comfort. If you don't believe me, ask my friend Brittany! The soft, buttery dough contrasts beautifully with the creamy, spiced pumpkin filling, creating a perfect balance of sweet and spice in every bite. The cream cheese frosting adds just the right touch of tangy richness.

Each roll pulls apart easily, revealing a swirl of orange-gold pumpkin goodness that tastes—and smells—like fall itself. I think you're going to flip over this recipe and I'm so happy to share it with you!
Variations to this Recipe

These are perfect, just as they are. That said, I'm always keen to mix things up! Here are some fun ways to add variety to these cinnamon rolls. Add any of the following:
- Coconut: I think coconut would be a lovely addition to these cinnamon rolls. Sprinkle on ¾ cup of coconut before rolling.
- Craisins: Sprinkle ⅔ cup of craisins onto the filling before rolling up.
- Sweet Potatoes: Mash sweet potatoes and use in place of pumpkin puree, if you like.
