If you want a quick Snickerdoodle-like cookie but you don’t have time to whip up a batch, have I got a recipe for you!

Copycat Bisquick Mix

This cinnamon sugar cookie starts with my DIY Bisquick mix. You’ll want to make a recipe of that to keep on hand. I keep mine in a ziplock bag in my pantry at all times and use it for all sorts of baking projects.

This Copycat Bisquick Mix is handy for so many yummy treats. You’ll want to check out my Bisquick cobbler, my Easy Raspberry Pinwheel Pastries and my Cheddar Bay Biscuits.

Today’s project starts with this easy Bisquick mix, some room temperature butter, milk, and some cinnamon and sugar. That’s it! I made a tiny batch for myself but I have doubled the recipe for the sake of this post.

What you’ll end up with is a soft biscuit-like cookie, packed full of cinnamon sugar flavor and buttery goodness!

Ingredients for Cinnamon Sugar Bisquick Cookies

2 cups DIY Bisquick

3 tablespoons room temperature butter

2/3 cup milk (or whipping cream)

2 teaspoons cinnamon

4 tablespoons sugar

extra cinnamon-sugar for sprinkling

How to Make these Easy Cookies

You’re not going to believe how quickly and easily these cookies come together! (Again, it starts with that bag of Bisquick mix you keep in your pantry.)

Preheat oven to 375 degrees Fahrenheit. Place parchment paper on a baking sheet.

This is a one-bowl mix. Add all ingredients to a small bowl and stir. You want a soft dough, one that’s scoop able.

Scoop the dough balls onto the cookie sheet and sprinkle with plenty of cinnamon and sugar.

Place in preheated oven and bake for 12-13 minutes or until the cookies are light and golden.

Place cookie sheet on wire rack to cool.

Move the cookies to the cooling rack to continue cooling.

These cookies are light, fluffy, cinnamon-y, and packed with flavor. I plan to make them for my grandkids when they come over.

I honestly can’t believe how easy these were! (Where have these been all of my life?)

Just one more reason to keep my Copycat Bisquick mix in my pantry!

Variations on this Recipe

I’m already thinking of ways to add to this recipe. Because of the texture I think the following additions would be yummy:

  • Oats: I might throw in half a cup next time.
  • Rice Krispies: I think they would be terrific in this recipe! Half a cup will probably be enough.
  • Nuts: Pecans, walnuts, or any other nut…they would all work with this cinnamon-y cookie.
  • Toffee Bits: I think they would be amazing in this recipe!
